Another thing you can do instead of Pat drying you can season the fillets with sea salt or any seasoned salt Captain a bag overnight will release the juices for more firm filet

You had me on fried fish sandwich baby! One of the world's best sammich ideas ever. And with bacalao? What is there not to like? Bacalao is our all time favorite fish here at The Hacienda. What a gift from nature, right? Wish I could get properly salted and dried bacalao here like you all do in Spain. What gorgeousness at 2:55 Never cooked cod with sunflower oil, but you got me thinkin' Albert. That would pair very well! Saffron? Dios mio mi amigo, me estas volviendome loco con hambre. Holy Crinoli, Albert....what a sammich! Perfection from Spain. Rock on, baby!

Nice sandwich! I like that you only used straight flour. it reminds me about what Sean Brock said about fried chicken... If you add things like milk or eggs and make a batter, then it's going to steam because of moisture. He likes to dredge in seasoned flour only, let it sit overnight and then re-dredge it before you fry it, because the initial dredge will get sticky overnight. This way you end up with a pure protein crispy batter.

OMG, I have the many ,many memories of bacalao soaking in an enamel pan in the fridge (I guess that was to remove some of the salt) and at some point cooked in a red sauce - I remember crying 'cause I thought I would have to eat it. LOL.

Si se puede usar aceite de oliva, pero que sea del suave, no virgin extra, que es muy espeso para freir este tipo de pescado, un saludo!

Looks so good! I thought bacalao was salted fish. Am I right or wrong?
Bacalao is the word for cod here in Spain, we have 2 types, fresh bacalao (which is what I used) and bacalao seco which is dry salted cod, much love

Got a son your age. And he will love your recipes. But I have to cook. He lives in the US and me in india.
Good sandwich but I stick with my recipe, I use Telapia fish, melted butter which I pour on the fish in a medium size bowl, and rub it well to evenly distribute it, then mix Cajun seasoned with flour and pour on the fish and make sure to rub it even on all fish, then fry it until golden brown. By now I mixed Japanese Mayonnaise with sweet relish and have lettuce cut in fine shorts strips. The bread is important, use a light baguette style bread. Spread the mayonnaise mix on bread, top and bottom, then place the fish on it and top it with the lettuce. I like a few drops of Tabasco on my sandwich and voila. I'm sure his sandwich is very good but try mine, it is also very good.
That looks terrible. Fish was bland looking. The fire was too high on that oil. U mixed oil with mayo for a sauce? And where tf was the tartar sauce
