- It was such a turbulent 2024, so angry, sad, and so hard
I spent the last days of 2024 quietly enjoying a glass of sparkling wine with my husband and making dumplings
January 1, 2025!! Let's start off warmly at home with your family.
This is a very good lotus root steak as a healthy and luxurious home-cooked meal
Eating root vegetables in the winter also boosts immunity
It is much less sweet and salty than braised lotus root, so it is good for dieting
This is a healthy home brunch dish where you can taste the luxurious lotus root while maintaining its crunchy texture
Healthy Home Brunch 1. Lotus Root Steak =
ㄴ Wash the lotus root cleanly and prepare it (you can use the skin as is or peel it)
ㄴ Spread salt on the washed lotus root and season it once, then cook it in the microwave for 5 minutes (cover and cook)
ㄴ Cut it into 1.5cm pieces
ㄴ Apply vegetable oil generously on both sides of the cut lotus root
ㄴ Heat the pan and cook the lotus root for 6 minutes on both sides with the lid on
ㄴ When it is golden brown, add 1 part soy sauce, 1 part mirin, 0.5 part allolose, and 2 parts water and cook on low heat Stir-fry it
ㄴ When the seasoning is absorbed into the outer surface, turn off the heat
This is a recipe for Bonnybam (simmered chestnuts) that I learned about at Little Forest and have been making and eating every year.
If you take out two of them on a winter night, they are a really sweet snack and they are also a very sophisticated and sincere snack to go with wine.
Wine snacks. How to make Bonibam (simmered chestnuts)
ㄴ Soak chestnuts (1kg) in hot water for 20 minutes
ㄴ Peel off the softened outer skin
ㄴ Add a spoonful of baking soda and let sit overnight
ㄴ Boil the baking soda water in a pot over low heat for 20 minutes
ㄴ Remove any bubbles that come up and rinse gently so that the chestnuts don't break when they're all boiled down
ㄴ Pour water again and boil for 20 minutes (Boil like this 3 times)
ㄴ When clean water comes up, turn off the heat, rinse, and use a toothpick to remove the thick stems and hairy skin
ㄴ Add chestnuts + sugar (50% of the chestnut weight) + enough water to cover the chestnuts (pour enough because they'll boil down) and boil gently over low heat
ㄴ (Optional) When the heat turns off, add a spoonful of soy sauce or 2 spoons of wine or whiskey to your taste and boil.
ㄴ When it boils again, turn off the heat and put it in a sterilized bottle Seal it
Let it mature for at least 2 days and then eat it
If you make the high-quality sweet chestnuts with whiskey, which are different from sweet chestnuts, the scent of whiskey is so good. I recommend adding wine or whiskey.
The easiest way to make dumplings!!
Recipe for cabbage and chive dumplings (about 30 in the size of a king dumpling/can also be made without cabbage) -
1 bunch of chives, 480g of minced pork, 4 green chili peppers, 2 white roots, 8 cabbage leaves (small size), 6 frozen shrimps (large), dumpling skin
Meat and chive dumpling filling: 5 parts soy sauce, 1 part oyster sauce, 1 part sugar, pepper, 1 part ginger powder, 1 part minced garlic, 45ml of water
Shrimp and chive dumpling filling. : Soy sauce 1, oyster sauce 0.3, sugar 0.5, ginger powder 0.5, minced garlic 0.5
ㄴ Finely chop the chives and prepare them. Finely chop the cabbage and add a spoonful of salt and marinate (after 15 minutes, drain the water and set aside)
ㄴ Chop the green chili peppers and green onions
ㄴ After defrosting the frozen shrimp, remove the water, sprinkle with 1 cup of mirin, salt, and pepper, and chop them roughly
(Meat and Chives and Cabbage Dumplings)
ㄴ Add 2/3 of the chopped chives, 2/3 of the chopped green chili peppers, 2/3 of the chopped green onions, and cabbage (all) and mix well with the sauce
ㄴ When you start adding 45ml of water, stir in one direction only to pound the filling
(Shrimp and Chives Dumplings)
ㄴ Add the remaining ingredients to the roughly chopped shrimp and mix well, then stir in one direction Pour the beef
(Shrimp is moist, so do not add water separately)
After boiling the water, steam the dumplings for 8-10 minutes (shrimp: less than 8 minutes, meat about 10 minutes) after boiling the dumplings. Let the steamed dumplings cool down and take them out.

When the ready-made Sagol Soup boils, add the rice cakes. When the water boils, add the dumplings. After 1 minute, turn off the heat.
Add the egg and green onions.
