Here are the temperature parameters for Jerusalem artichoke (Helianthus tuberosus), which is a hardy tuberous crop:
🌡️ Frost-Kill Temperature: Jerusalem artichoke is frost-hardy, and its foliage can tolerate light frost, but the tops will die back at 28°F (-2°C) or lower. The tubers, however, remain viable in the ground even after freezing temperatures.
🌡️ Germination Temperature: Ideal soil temperature for sprouting is between 50-86°F (10-30°C).
🌡️ Base Temperature: The base temperature for growth is 41°F (5°C). Below this, growth significantly slows or halts.
🌡️ Optimum Temperature: The optimum temperature range for growth is 68-77°F (20-25°C). This range ensures healthy foliage and tuber development.
🌡️ Maximum Temperature: Jerusalem artichoke can tolerate temperatures up to 95°F (35°C), but excessive heat may slow growth and reduce tuber quality, especially without adequate water.

Jerusalem artichokes are resilient, but they don’t hold a candle to tomatoes in terms of yield efficiency per square foot. While you’re waiting for sunchokes to take over your garden, you could be trellising a dense canopy of indeterminate cherry tomatoes and getting weekly harvests for 5+ months. Fun fact: cherry tomatoes have been recorded yielding over 80 lbs per plant under optimal conditions. Good luck getting that from a sunchoke.

Jerusalem artichokes should NEVER be planted randomly. Have you even considered their invasive nature? Real permaculture involves understanding plant behavior within a holistic system. This would be a good opportunity to remind the community about the importance of companion plants and nitrogen-fixing guilds, this is very important for such plants as Jerusalem Artichokes.
If they just grow in the same spot over and over, without anything else growing, then you get a wet season, they will all die. Those from the daisy family can seem invasive, but really self destruct in the end, and something else will take over
Popularity contests are for people, not plants. Instead of planting trendy veggies, how about focusing on climate-adaptive species and local biodiversity? Grow better, not cooler. 🥦❌
