So,maybe as explained in tv and movies,the future isn’t always set in stone.
I noticed Horror's Hand didn't activate until Mandy was in Touching Distance just to show how deeply she buried this fear one that even she forgot and convinced herself doesn't exists.

Irwin's Worst Fear: Telling jokes to wild bears (A little bizarre and seems too rare to be true.) Mandy's Worst Fear: Being honest of her true feelings towards herself, and her friends (Honestly that was surprising considering her personality.) Grim's Worst Fear: Spending every day of his life with Billy and Mandy (So obvious that he managed to overcome that fear throughout the entire series.) I guess in the end they should've just let Grim have the hand since he's the only who conquered his fear.
Add basically retiring and living a friendly and simple life, remember that she always wanted to conquer the world when she grows up so it's the ultimate slap in the face to become Irwins housewife
