- Life is currently full of ups and downs. But I've been wanting to make these Beautiful strawberry tarts for a while. With shortcrust pastry, filled with crème patissère and topped with fresh sweet strawberries. Perfect for a summer, easy to make!
Ingredients:Pastry:.250g flour.125g butter.125g icing sugar.Vanilla.1 egg
Crème:.2 egg yolks.250ml milk.60g sugar.1 tbspflour.Vanilla

For anyone looking for US measuring:
Crust:
1 cup flour
1/2 cup sugar
1/2 cup butter
Pinch of salt
Vanilla
1 egg
(Keep 30 min in fridge)
Bake in oven 20-25 min 350 f
Filling:
2 eggs
1/4 cup sugar
Vanilla
1 tbsp flour
1 cup Warm milk
(Stir on medium heat until it thickens)
it's two cups flour

Did you use plain flour for both the pastry and creme?
Yes it was plain flour.
How many tartlets can we make
Amazing, quick and easy recipe! I added some fresh lemon juice to my custard and it was delicious. Tastes and looks even better on the next day as the custard gets firmer

Looks good. I need to work on my creme. Maybe it was my vanilla extract are eggs but my creme wouldn't get as light and creamy as your but practice makes perfect. These look delicious.
Thank you Tina, it is important to use a whisk at the start and mix very well untill all combined then once on the heat it is important it is medium and use a spatula continiously stirring, then turn the heat off when it starts to become creamy not when completely thick as it continues to thicken off the heat...

Very nice presentation, I'm going to use this recipe for the pastry base, but.... where is there gooey strawberry syrup?! The syrup glaze is absolutely critical to a strawberry tart.
Syrup is a must for sure, should have used it here 😊
I make them with hardly any rat in them.

Can you do one with strawberry cream like filling?
you can use whipped cream, it goes very well with strawberries..
Is the butter softened at room temperature before using or chilled?
Sorry for the late reply, not soft butter and not hard- in between. This dough is called Pate brisée in France which mean broken dough. Usually you can still see the bits of butter not fully incorporated...

Hello! Can I prepare the dough, rest it in the fridge, and the cream as well, and keep them overnight in the fridge?
This way i can bake the dough the next day, and combine everything?

How long did you take to make strawberry tart?
Around an hour, it takes about 15 min to make the dough, 15 to make the cream and like 30 min to bake...

I don't know, but it sounds interesting to try! great recipes were invented with just trials :)
oh and you can use whipped cream + icing sugar combined together topped with the strawberries it will be so delicious :)

Hello, may I know how many days can it kept refrigerated and the tart is still fresh? Thank you
2 days, But I would keep the dough in the fridge for 3 days or freezer for up to 3 months.. then will take only about 20 min to bake.. the custard will be good in the fridge for 3 days. Then just add the strawberries- Best this way if you need it later..

yes for sure you can use any mold size as long as it's not bigger that around 20cm if you are making one tart!

Why did my dough come out soft
Could be the flour, did you use plain flour?
