Looks good. However, you can use a steamer instead of boiling plantains directly in a pool of water. Also try cutting off the tip ends only of the plantains and steam it whole with skin on, then cut after its cooked or bake the whole plantains wrapped in aluminum foil with it's skin on. Microwaving semi ripe plantains whole with its skin on while covered for about 3 minutes or so works great. The skin retains moisture and flavor of the plantains.
It looks really yummy!! However, can u suggest what veggie alternatives can we use as a replacement for the Oku leaves? I live in Malaysia, not sure if we can find Oku leaves here..

You can use frozen spinach let it defrost then get the water out by squeezing it out it serves the same purpose...

Boil your plantain as whole and cut it after it's cooked to avoid losing nutrients into water.

I would peel the plantain before boiling it
If you cook ripe plantain without the skin, it would be too soft and watery!

No real reason, but I have grown seeing plantains are not peeled . May be coz they're always very soft , making it hard to peel
