I make something similar just using mixed berries (frozen & or fresh, depending on availability) and pure maple syrup that I don't boil to the same viscosity as this. It's basically a fruit "syrup" to pour over waffles & pancakes. This is so easy! Unfortunately, the strawberries available to me in Hawaii often don't have much flavor. Do you think I could use the same proportions (1kg fruit to 2 cups sugar) to make mango jam? We do have delicious, flavorful and abundant mangos in season.
Here, we always enjoyed the delicious and sweet taste of Spanish strawberries specially it is in season. Mangoes here don't get sweeter thats why i don't buy more often. If your going to use 2 lbs of mangoes just add 1 1/2 cup sugar.
Importante na mag lagay ng lemon juice when making strawberry jam or preserves to prohibits bacteria growt, so your jam will last longer. Isa pa, lemon juice will balance the sweetness of your jam.
