Cream Stew Recipe (White Chicken Stew with Mushrooms and Root Vegetables) | Cooking with Dog

  • We are making Cream Stew with chicken and lots of root vegetables. The roux with the savory mushrooms is so delicious! This is one of the best recipes for Christmas dinner.
    How to Make Cream Stew
    cookingwithdog...
    (serves 2~3)
    200g Boneless Chicken Thighs (7 oz)
    ½ tsp Salt
    White Pepper
    3 tbsp White Wine
    200ml Water (3.4 fl oz)
    2 tbsp Olive Oil
    1 tbsp Chopped Garlic
    ¼ Onion, Sliced
    1 Bay Leaf
    3 types of Mushrooms (300g/10.6 oz in total) - ex. Maitake, Shiitake, Shimeji, Enoki or King Oyster Mushrooms
    2 tbsp Cake Flour
    250~300ml Milk (8.5~10 oz)
    100g Carrot (3.5 oz)
    100g Onion (3.5 oz)
    100g Lotus Root (3.5 oz)
    100g Satoimo Taro (3.5 oz)
    100g Turnip or substitute: Daikon Radish (3.5 oz)
    50g Celery (1.8 oz)
    Salt and White Pepper
    Chopped Parsley Leaves

    鶏もも肉:200g
    塩:小さじ1/2
    白コショウ
    白ワイン:大さじ3
    水:200ml
    オリーブオイル:大さじ2
    にんにく薄切り:1片
    玉ねぎ薄切り:1/4個
    ローリエ:大1枚
    きのこみじん切り:300g(しめじ、舞茸、えのき、エリンギなど合わせて3種類)
    薄力粉:大さじ2
    牛乳:250〜300ml
    人参:100g
    玉ねぎ:100g
    レンコン:100g
    里芋:100g
    蕪(大根):100g
    セロリ:50g
    塩・白コショウ

    Chef recommend using the cake flour for the white sauce :) Regular flour will thicken the sauce when you add the milk, making it difficult to achieve a smooth texture.

    I made it with local vegetables: celery instead of lotus root, potatoes instead of taro, any white mushrooms available. However, it's sooo delicious :))) !!! My favourite stew ATM.

      +JoshuaPhilgarlic I agree with you about lotus roots. Lotus roots in Japan may be safe to eat but lotus roots imported from China are gravely toxic because they are grown in the polluted soil. I'd never eat that.

    The mushrooms will increase the savory taste of the stew. Please use chicken stock instead of the water if you leave out the mushrooms :)

    I made this a couple of weeks ago and it was ABSOLUTELY delicious. I didn't use all of the vegetables in this clip, only what was available to me at an American grocery store (since I have no access to vegetables available at the Asian grocery store), but it still turn out great. Advice: if you're using thighs with bones, leave it in pot with the rest of the stew. Then cut it half (with the bone on one side) when the stew is almost done and leave it in the pot to cook in the heat!

    The rolled wedges will help cook the lotus root fast and also absorb the flavor easily :)

    I made this today, with the vegetables I had on hand: potato, carrot, hakusai and corn. I also used parisian mushrooms and shiitake mushrooms (I only had 2 types) for the roux. It turned out great! Thanks! :)

      Shiitake is not a good mushroom to use in this recipe.

    If the pieces are large, you can enjoy the taste of the taro well. Smaller pieces are fine :)

    Yes you do! Or a farmer's market if you live in an agricultural area (like California valley). I live in southern Anatolia region of Turkey right now, and the produce is phenomenal! It makes a HUGE difference.

    Regular cow milk is used for this recipe. You can also use coconut milk or skim milk :)

    You can remove it but many cooks keep it in because it's easy to remove once you find it on your plate, and it doesn't go soft so you'll find the entire leaf instead of pieces of it. Keeping it in the pot actually gives it the opportunity to give the dish more flavor because you give it more time to add it's flavor!

    I tried this last night for christmas dinner!!!! It was so good! However, i added only carrots, onions and potatoes.... the other vegetables are a little difficult to find here.. awesome taste and i served it with garlic toasts!

    I made this the other night and wow amazing flavor! I used chicken stock instead of water and 1 entire bayleaf made my tongue and mouth tingle afterwards so I'd suggest maybe using just half.

    I've read a good substitute for lotus root is water chestnuts and taro is potatoes. You could also use cabbage in place of the lotus root as they stated at the end of the video! That's what I plan to do lol.

    Another "tour de force" by chef who ranks as one of the world's greatest in my book. After I win the lottery tomorrow I shall hire her, if she's willing, to come cook for me for a few days. This recipe looks like an Asian "chicken ala king" and also looks scrumptious! You are one of my favorites chef and I am so happy that you seem to have recovered so well from your accident.
