    Is there a trick to know how wide to cut a piece to make that two-sided border? Or just trial and error?

      well, you can get an idea by the opening underneath but I typically just grab a scrap and not even do an entire border, just one notch on each side to see how I like it best...it can never hurt to go WIDE but some of the prettier borders are when the two come together really close so that's is why I test it a few times to get the look I really like.
