      Hi Mary, QUESTION: I do not smell anything when I smelled my Hard Red Wheat Berries Or the Soft White Haven't tested my Hard White yet, as they haven't been opened to store yet, working on it lol. I've watched a lot of vids on storing it in mylar, also people NOT using mylar and putting it in huge lid covered food grade containers, no oxygen absorbers as their canisters are to big. I've used 5 gal mylar bags FIRST time today but no oxygen absorbers as I have very small ones, and I don't know how many to use, so I just shook the bucket side to side to get them to settle and did the zip lock that's on the mylar bag and pushed out all the air best I could. Do you figure that's good enough? I hope so, cause I already put the lids on the buckets lol lol BUT I will open them IF I have to. thanks for ALL you do to educate us out here. :)

      Oh Brooke! You are such a sweetheart to say these things and you brought tears to my eyes! When my dad was alive he had Parkinson's disease and was quite disabled in his later years. I took care of him and he used to say..."I don't know what mom and I would have done without you." It was so generous of him to say that because I am quite imperfect but I tried to do my best. My mom is still living and she is so kind with her words for me. I really don't know what I did to deserve such loving parents! Thank you again for your kind words! Love, Mary

      Amaranth is a lifesaver for me since as an adult I can’t consume any gluten, corn, most grains. I grew up on grits, and Amaranth has that similar consistency, which totally hits the spot as a morning meal. It’s also my number two source of protein after animal meat, so I work it into many of my meals throughout the day. Super underrated “grain” 👍

    You are so right... I do believe that you have a whole other video on that topic too... you are such a blessing and a source of great and comprehensive information. Don't ever think you go into too much detail. It is exactly right and responsible. So many other people who are lazy and don't put in the enormous effort you do to do such a great job.     We grow amaranth here in the SF Bay Area. The leaves have a wonderful purple color. The leaves are cooked and are delicious.

    I used to cook up wheat berries for a hot breakfast cereal.. and then cool down the berries for sprinkling on foods.. I'll have to start that again

    Wow! A whole lotta information here. I'm gonna have to watch this again and make notes because I really wanted to add wheat whole grains to my long term pantry but I just didn't know enough to make that purchase.     I can attest to how amazing millet tastes. My aunt made a chicken and millet dish when I was a teen and very picky and I LOVED it! Thanks for reminding me about this ancient gluten-free grain. We'll be having it soon!!!

I have had workmen here all week - it's been a zoo. Even with the virus we had to finally get some workmen in here to fix some very pressing problems. And then...my old oven went on the fritz!! And of course - nothing in this old house is a normal size - so I have to have an installer come here on Monday to measure to see what we can make it fit. Oh boy!! Never a dull moment.     I have a mill now so will be turning my grains into flour, but i do't know how to cook grains to make hot cereals. Will you be showing us how todo this, please? Also i have made the Rye sourdough starter and it is very good but... I stink at making sourdour bread.

    Tq for the detailed description about grains.
    I would like to add that buckwheat flour is made into soba noodles. Also I mixed some millet and/or buckwheat when cooking parboiled rice.

I'd love and appreciate if you could do some videos to illustrate some cooking suggestions to back up all this lovely information. I have for the past year cooked millet and buckwheat together with porridge oats.....not so sure if this is correct! You do such an amazing job x

    I just discovered Mary last month and am so grateful for her as a resource. I'm wanting to be bread-sufficient and have been watching her videos to know which grains to get, what flour mill, sourdough starter, etc. I wonder if Mary has a go-to book of grain recipes. If for some reason I can't access her videos I'd like to have a recipe book for how to make some staples and which grains to use for what. Thinking pasta noodles, cereal/granola bars, biscuits, bread, cakes, etc. Is there a go-to or a couple go-tos?

    Thank you so much for all you do to educate those of us that are new to traditional foods. My daughter and her two beautiful babies had to move in with me a few years ago. We have decided to make the transition to a traditional foods household almost a year ago. We've been reading articles and obtaining as much information as possible to make our transition a successful one. Then a couple of months ago I stumbled across your channel! You are exactly what we needed! We are feeling much more confident now that we are moving forward in a positive and healthy way. I adore learning about the history of traditional foods, the proper preparation and health benefits of our new lifestyle. We are by no means completely there, but thanks to your guidance, knowledge and dedication, we will be! We are taking our journey slowly, because we became so used to processed foods and want (especially the children) to not be overwhelmed by the drastic difference in tastes and textures. I'm so happy and excited about our journey, more so now that we have Mary's Nest to help guide us. You are a blessing to so many and we are grateful.

    I love this channel! Speaking of rye, I love rye and she is correct in that a rye starter is awesome! I had trouble getting a starter going when I started making sourdough a couple of years ago.
    Then my Scandinavian brain said try rye. We love rye. My starter went crazy. I use it to make any type of sourdough product. If you are only using a cup or two of starter and adding several cups of other flour, I don't find the rye to be dominant. I make rye bread also.

    Mary. I’ve just started watching your channel this past week, and upon hearing you talk about the “Nourishing Traditions ” book I purchased it and 2 other books by Sally. “Nourishing Fats” and “Nourishing Broth”. Nourishing fats was the first to arrive. I’m only on page 14 and already I’ve felt compelled to stop reading and write this comment. MY WHOLE LIFE HAS BEEN A LIE! 😲🤯. Please note, I’m a 48 year old wife and mother to 2 grown children. I garden, preserve/home can, do a lot of from scratch cooking, had my own catering business for about a year and ran a commercial kitchen for about 13 years, so i for sure know my way around a kitchen. I always thought I did an “ok” job at watching what we eat. Upon watching your videos and beginning to read the works of Sally I’ve discovered that I’m way more ignorant about food that what I ever could have imagined! I knew politicians got bought out to the highest bidder but it really never occurred to me that doctors would/could do the same thing! “First do no harm”. My whole life has been “animal fat is the work of the devil and will kill us all!” So I DID buy low-fat milk and dairy. I DID cook with vegetable oil. I grew up on margarine. I’ve bought an innumerable amount of pounds of boneless skinless chicken. All of it, ALL OF IT has been false information!       Hi Lyn, The information from the US Food and Drug administration says that water in food safe plastic (like what we buy at the store) has a very long shelf life. But I have learned from other people that they "can" water in canning jars and store it that way. Very clever indeed! Love, Mary

    Can you do video on best grains and recipe for pizza dough? Especially a good recipe using ancient grains. Can you make pizza dough from oats? Would you please make that millet bread for us? If you were to pick 3 to keep on hand what would you choose?

      Hi Jackie, All great questions. Yes, I will be doing more ancient grain baking. And yes, I am planning a video making the millet bread. If I were to just pick three grains to buy, I would choose Einkorn, Spelt, and Hard White Wheat. Hope that helps. Love, Mary

    I tell people the same combines, hoppers or bins that were used for wheat might be used next for oats and it's really hard to sterilize a combine 🤣

    As always, I learned so much from this video. Mary, you have thousands of scattered friends who appreciate you and your sharing so much!
    I was wondering about soaking oats overnight. I usually get Bob’s quick steel cut oats from Costco. It’s nice that they are organic. I have soaked them a couple times recently, hoping that would help. But it it does help, should I drain them in the morning or use the water that I soaked them in?

      Hi Lyly, Definitely. I like to soak it overnight with a splash of vinegar to help deactivate some of the phytic acid and then use it in any muffin or quick bread batter that I am making. You can also throw the soaked bran into pancake or waffle batter. Also, if you make bread, it's great for dusting the baking stone or Dutch oven to keep the dough from sticking. Love, Mary

    Mary, thank you so much for sharing all this wonderful information with us. I have tried almost all of these grains and use most of them. However, it gets a bit overwhelming trying to remember all the nutritional factors of each grain/seed.
    Is this information in your book that is available to download? I'm still waiting to get internet in my area, so I can't view that book yet. I recently started experimenting with teff and love it. I'm pretty sure I have Aramanth flour/grain in my pantry also. I'll be looking for buckwheat. Though I enjoy products with buckwheat, I've never bought it.
    Sorry my comment is so long, but I have two questions?.
    Have you ever ground popcorn for cornmeal? I have and I love it.
    Secondly, when milling a very small grain such as millet, what setting is best? I have a Whisper Mill that I may pass to .y daughter in order to justify ge6the Mock mill.

      I love my Whisper Mill! Don’t give it away!
      I mill popcorn for cornmeal too lol it’s delish
      I wouldn’t bother milling millet or teff. They’re not flour grains. Throw in a bread or roll recipe.

    Mary thank your for sharing all your knowledge and i love everything you do, it is so interesting and you are the reason i started making my own flour...I found sometimes the recipe is asking for strong bread flour and i know it is the flour with high percentage of protein my question is how do i know what grain has this ...low or high procentage of protein .is there anyway info online i can learn about it..

    MARY, what would you call food stored in a root cellar...and I mean the perishable foods like potatoes, apples, and cabbage, etc? Is that an additional "corner" or is it added to the working pantry even though it is extended foodstuffs?

      “The spring house” was another place they would store things before refrigerators or even in cold creeks nearby.

    If one is highly gluten sensitive it is best to totally avoid oats in any form, "guaranteed pure oats" with no gluten or not! Worst reaction I ever had many many years ago before I got a whole lot smarter was eating rice cakes that were made with some oats added. Again if one is highly sensitive avoid ALL oats in any form. Not worth the horrific pain and trouble.

    Just be aware that not all gluten free people can tolerate oats. I can't use them because they contain a cousin to gluten.

      Hi Ann Marie, I understand completely. In July 2020, RUclips changed their policy and added mid-roll ads ("commercials") to all videos over 8 minutes. In the past I never picked to have mid-roll ads on my videos. I gather there is a way for me to manually change each individual video but I have to learn more plus I have over 300+ videos, so you can imagine the daunting task that would be.
