- Here is a delicious Mangalore style mutton curry .
The main ingredient here in this recipe is the red chilly. Special Byadgi red chillies are used in this recipe . If it’s unavailable it can be replaced with Kashmiri chilly.

Ingredients
2 kg mutton ,
3-4 finely sliced onion
3-4 sliced tomatoes
Ginger and garlic paste
Few garam masala spices
Cinnamon
Cloves
Bay leaves
Black pepper corns
Fresh grated coconut
Oil
Turmeric powder 1/2 tsp
1 lemon
Few finely chopped coriander leaves .
Salt as per taste
Method
To make masala paste
In a blender add washed roasted Byadgi red chilly , roasted coriander seeds, cinnamon stick , cloves , ginger and garlic paste , turmeric powder , 1/2 cup water and blend into fine paste.
In a pan dry roast 1 cup fresh grated coconut, roast it till it turns brown . Let it cook and then add to a blender .
Add 1/2 cup water and blend into a fine smooth paste .

In a pressure cooker (big enough to cook 2-3 kgs mutton ) Add 1/2 cup coconut oil or any refined oil.
Add a stick of cinnamon, 3-4 cloves , 1 bay leaf .
Add sliced onion and sauté.
Saute till it turns golden brown .
When the colour changes to brown add sliced tomatoes.
Cook till it turns soft.
Add the blended masala paste and sauté for 3-4 minutes .
Add salt as per taste or 3 tsps .
Then add the washed and drained mutton pieces .
Sauté for 6-7 minutes .
Add water to the blender in which masala was blended . Add 2 cups water and add it to the pressure cooker .
Close the lid of pressure cooker and cook it till 3-4 whistles or until the meat is tender.
When the pressure has cooled down , transfer the curry to a vessel and boil it . Add the coconut paste . Add water to dilute the curry as required.
Let it boil for 5 minutes well .
Then add freshly chopped coriander leaves .
Serve it hot with pulaav or parata , Dosa .
