Actually, Mexican and Indian do go well together. Both share a love for spices, chili peppers, beans and rice. So I would think it would be a good combination!
I think the thing is, though, that you have to be someone who’s well-versed enough in both cuisines to pick the points to make the fusions. If you only know the bare minimum of something like Indian cuisine, you’re more likely to struggle in terms of thinking outside that. And I think part of why the chefs who got French cuisine as one of their choices did well is because a lot of modern day cooking techniques and dishes have a basis in French cooking (French cuisine is also one of Chef Ramsay’s specialties too). So it’s really a matter of knowing how wide of a playing field you can work with.

yeah I didn't get the reaction they gave that, both cuisines have a lot of dishes surrounding lovely spices, beautiful proteins, amazing breads like roti and tortillas.
Mexican/Indian is actually a VERY smart choice... a lot of the palette and spices are very similar, as well as the breads/meats way of cooking... the problem lies in making a dish that's going to impress world famous chefs.... Its a "safe" choice, but do you want to be playing it safe at that point?

See me I’ve always wanted to do a Chinese and Mexican fusion burrito of like an orange chicken or sesame chicken and like a sriracha salsa with Mexican beans and rice. On paper it sounds like it could work but the trick I’m having is the right mixture of ingredients in the salsa and rice so it taste good.

I worked in France for a bit. There’s also snails, pizza with no cheese on it, and really REALLY undercooked meat.
