Rising Bread Dough in a Dehydrator

  • I'm using my favorite bread dough recipe. I featured it in my first DoughVember video. The recipe makes two loaves but instead of making two loaves I made one loaf and six dinner rolls. To make the rolls you simply take one of the two loaf portions and cut it into six pieces. Then cut each of those six pieces into three pieces. Roll each into a ball and place three into each muffin in a greased muffin pan. Delicious!
    Here's the recipe I used:
    Blue Ribbon Bread
    2 1/2 C warm water
    2 Tbsp active dry yeast
    2/3 C brown sugar
    Mix in a large bowl or mixer bowl and let set about 10 minutes until the yeast proofs and is foamy. When it is foamy gradually add the remaining ingredients slowly mixing as you add them.
    5 1/2 C whole wheat flour
    1/2 C gluten
    2 tsp salt
    2 Tbsp oil
    2 Tbsp vinegar
    1/2 C potato flakes
    1/4 nonfat non-instant dry milk
    1 tsp dough enhancer
    Once everything is added continue to mix for 12 - 15 minutes. Let rest for an additional 10 minutes. Remove from the bowl and knead it a few times then divide in half. Form each half into a loaf in a loaf pan sprayed with spray oil. Let rise again until double in size. Bake at 375 until golden or sounds hollow when lightly tapped. For a soft crust wrap in a kitchen towel and let cool on a wire rack.

    I LOVE Everything Seasoning for Bagels!!!! LOVE the idea to cover your bread/rolls/ext with a damp cloth while in the dehydrator!!! LOVE the idea to put in dehydrator to rise dough!!! LOVE your bread and rolls!! Look Delishious!!!!

    I haven't tried this but then again my dehydrator has always been kept in the back room until recently. Now I can use it for bread rising and/or yogurt making. I haven't tried that either.

    Thank you, I had heard you can proof in your dehydrator, but haven't done it. I make an 4 ingredient artisan bread and put the everything bagel on. Always a big hit wherever I take it.

    OMG, those are some serious cloverleaf rolls! I've got a recipe for refrigerator rolls that I've got to send you. They were the first yeast dough that my late maternal grandmother taught me to make. Would you prefer it via email, or Facebook messenger?

      @@LindaCBMediaGroup I got mine at Cabela's. It's Cabela's brand. I got two of them when they were having a big sale. Last time I looked at them they had updated the look of it. I've had these for years and love them. They were on sale for $99 from $199. I think they have different looking ones now.

    I've only used my dehydrator once to proof bread and it was an epic fail.

      That's too bad. I set mine at 100 degrees and make sure I cover the dough with the damp cloth. Doing that seems to work well
