Most regular boxed pastas are vegan, they’re made with wheat. The noodles you used in the Alfredo are just a bit healthier, but if you wanted to recreate it with some regular noodles I think you’d like it a lot more!
As a Vegan myself, the pre-packaged food is ok. But I suggest looking up chefs, and cooks like Tabitha Brown, Avant Garde Vegan, Korean Vegan, Rainbow Plant Life, Sweet Potato Soul, Chef Joya, etc, they show good examples of good vegan meals. Light Life is fine, but I like Rice Paper Bacon more.
Regular dry/dried pasta like fettuccini or spaghetti is vegan, it's just made with duram flour and water, so you could've just used that sauce with it and been fine 💜
I'm not vegan, not even close 😂, BUT, soyrizo (vegan chorizo) is legit good. I buy it all the time. Also, I eat a lot of vegan meals because I love middle eastern and Indian food, and there's tons of dishes in those cuisines that are 100% vegan. 😊💜
