The main issue I always run into is that I'm best at cooking Korean/Korean-Chinese/Japanese dishes, and most budget stores dont have the ingredients I need/common ingredients in bulk 😅 especially after moving to such a white area, I realized how hard it can be to find stuff like gochujang, dried chilis, rock sugar, etc
I live in one of the most violently white areas and I have to go to this one store 40 minutes away into the city for things like that, but it's nice because it's run by a couple of old korean grandmas

Oklahoman here: Use some of the oil from frying your steak to make the gravy. If you can drain enough out of the pan you used to cook the steak in that's even better, so you get the fond mixed in. It's the most important part of making a white gravy that is flavorful and not just pepper and flour. 😊

I say that because it's home to Kendall's and it's only about 15 minutes outside of Norman. But if you weren't, it's a must. Truly the best chicken fried steak on earth. There's also an excellent Laotian restaurant in OKC called Ma Der Lao which has been on a few different lists of best new restaurants in the US. On canned vegetable nutrition: Yes much of the nutrients go into the water, but not all of them. For example, vitamin C breaks down pretty rapidly when cooked, and I'm sure it's not the only one. This is why scurvy became such a problem with explorers even in later centuries; they weren't eating no fruits or veggies, they were just eating tinned ones that had all the vitamin C destroyed. But also you can go like 2-3 months without vitamin C before contracting scurvy. This is also why so many canned products have ascorbic acid (vitamin C) added to them; to counter the effects of cooking. Fiber can also suffer negatively from being cooked because it breaks down. There are different kinds of fiber though and as far as I know only insoluble fiber is negatively affected. On the flipside, frozen produce often has more nutrition than fresh. This depends on the fresh produce in question and where it's sourced from, but frozen produce is generally picked at peak freshness and flash frozen immediately, where "fresh" product is often picked early and allowed to ripen in transit, sometimes taking weeks to reach your table even if you eat it the day you buy it. Because of this, even some canned products are more nutritious than fresh. Tomatoes are an example. Canned tomatoes are picked at peak freshness and almost immediately cooked and canned, locking in whatever nutrients survived the canning process. Fresh tomatoes often are picked green and ripen on the way to the store, so they have less time to develop and store nutrients before they're cut off from their roots.
