You can make a good gumbo with that turkey carcass. Add onion, tomatoes, celery and season it with file’ (ground sassafras leaves). Simmer it for a couple of hours. You can add some shrimp and crab right at the end. Serve over plain white rice. It is good with French bread.
Lent for me as well but I love fish anyway. I make salmon loaf and usually have polenta and broccoli with it. The oven cooked fried rice would be a nice change from my fried rice. The hard boiled eggs in sauce remind me of creamed eggs on toast. I’ll have to try the ginger in paper towels since mine doesn’t last long. My sugared ginger does. Everything looks scrumptious ❤️ Do you feed the peels to the chickens or dry and use for yourselves?

Hi Sharon! I've never had creamed eggs on toast. It does sound delicious, though! Our chickens get the ginger peels. They love them! ❤️
