    OMG I JUST MADE THIS AND I'VE NEVER HAD PUMPKIN PIE BEFORE AND THIS IS AMAZING. If you are in doubt for sure try this is so incredibly delicious and my whole family loved it thank youuuu hunny (vegan honey, of course)

    butternut squash makes an amazing pumpkin pie and it's usually available when pumpkins aren't. tastewise I can't tell the difference and I actually prefer the texture of the squash. :)

    so roll out the pie crust then roll it back on to the rolling pin in order to place it into your pie pan makes it way easier to move it around.

    i am baking a pumpkin pie as i type. i used coconut milk and a flaxflour binder, with an animal cracker and vegan butter crust. it is in a my small cast iron pan. cannot wait for it to get done!

    I’ve never had pumpkin pie, but my daughters (3 and 6yo) and I made this filling together and it IS SO GOOD!
    We used a gluten free recipe for the crust, but the filling is delicious.

    hint roll up dough on rolling pin to put on dish and take out dough while making filling so it's easier to work with.. I can't wait to try this vegan version of this pie thank you

    I'm not vegan or vegetarian, but I am allergic to eggs and milk. I've tried making pumpkin pie-ish stuff using just cornstarch as a thickener, but I'll have to give this a go as well!

    I like this recipe cuz it’s simple and yes it’s pumpkin pie for sure. It’s not satisfying my craving tho. Sometimes vegan recipes that need egg replacements end up with a watery texture instead of that creamy custard like texture and this recipe does that. So I think I’m going to keep testing recipes. But for a quick pie recipe it’s definitely good and easy!!

    hint - fold the pie crust in half, then again into quarters to help you lift it into the pan, then just unfold once you get it into the pan

      That's definitely a good trick haha. My crust was a little too thick to fold though, I wanted a thick pie crust =P

    Gonna give this a try. Thank you! Roll the crust around the rolling pin. That's the easiest way to transfer it to the pan.

    Are used sugar substitute instead of sugar. This is because I am diabetic. But it was a pretty good recipe.

    For those wondering what to do with the excess pumpkin filling, I just try this out. You take what’s left over and put it in a sauce pan. Then bring it to a boil. Pour it in a cup or a bowl and put it in your refrigerator. Result is pumpkin pudding. You might also add bananas to it to make it taste better.

    Making this right now. After auditioning 1,000,000 vegan RUclips recipes, this is the one that spoke to me. I don’t have any aquafaba so i just upped the cornstarch. I’m also using a cookie crust that’s been living in the cabinet for too long. Praying for vegan voodoo in the oven!

    I’m allergic to coconut. Is there any other kind of oil I can use that would help it firm up? Palm shortening? Would that be weird?

    Can I use regular shortening sticks in the pie crust as opposed to earth balance shortening sticks? My local grocery has earth balance butter sticks but I’ve never seen the shortening there.

    I just made this! However after letting it cool completely I touched the top of the pie and the filling stuck to my fingers like it wasn’t cooked (I cooked it for 45 min) 😬 will it get a bit more firm after putting it in the fridge?

      It should firm up, yes! The top around the edges should be a bit firmer than the centre. I've never touched the top until after it's refrigerated though 😅

    You wrap the pie bottom on your rolling pin loosely and then use the rolling pin to transfer it to the pan.

    This recipe is not working for me. I followed all of the instructions, but I used store brought crust in some aluminum pie pan, and it's still runny after 45 minutes. It's like it was never in the oven. I'm not sure what to do. HELP

      Hmm you're the second person who has run into this issue with an aluminum pie pan. I wonder if the aluminum pan doesn't hold heat well enough to cook the filling. Worst case scenario, if you let the pumpkin pie chill, the coconut oil in the mixture should help it firm up a little bit. It shouldn't have been runny at all though, it's a fairly thick consistency, even when you're mixing it.

    Is the coconut oil necessary in this recipe? Or can you recommend a substitute? Oil free

      The coconut oil helps this pie set
      You can leave it out of you likw but the filling will be more loose

    I was wondering if I don't have coconut oil, can I use coconut milk? The solid milk part at the top of the can when it's cold? And if so would it be the same measurement? Thanks!

      You could use it but it won't be quite as firm in the end. If you want, omit the soy milk and coconut oil and just add 1/2 cup of that coconut cream instead to even the difference of liquid and fat.

    Does aquafaba(?) work as an egg replacement in all/most baking recipes or specifically for this pie recipe?

      +Chantelle K it depends on the recipe. Aquafaba behaves a lot like egg whites. You can whip it into meringue, foam, mayo, etc.

    What if you're mildly allergic to cinnamon or nutmeg and that's why it burns for you?

      Nutmeg doesn't burn me, it just makes my tongue numb. But I never thought about an allergy haha. I just avoided it because I don't really like the flavour haha. Maybe I should look into that. =/

      +Amanda Stevens haha so up until Dec I didn't notice a bad reaction to all nuts, but I had been avoiding almonds, cashews, hazelnuts and macadamia nuts for a couple years now cause they make my throat tingly =P i noticed I was getting that reaction to pecans after remaking the pecan clusters 🙈

    WHAT??!?! how did you get that soy whipped cream out so easily?! i got some for thanksgiving and it just wouldn't come out of the container normally it just sort of slumped and then the nozzle stopped working all together, did i just get like a dud or something?? i'm bitter now lol

      If you store it upside down right away in the fridge, you don't lose any of the pressurized air that pushes it out. I get that slumpy whip around the 30% mark of the bottle. Sorry you got a dud!

      Agar agar would be great here! You could use it in place of the aquafaba if you'd like. Same about of liquid as aquafaba + 1 tsp of agar and heated over stove to "activate" the agar.

    Earth Balance discontinued their buttery sticks and shortening, what fat have you been using for your pie crust?
    It looks easy watching you roll out a pie dough, but I tried making a pie crust and it turned out disgusting and ugly :o/

      What?! They discontinued the buttery sticks too?! TBH I haven't made a pie since, but I've had good results from Crisco before =P Any sort of vegetable shortening would work :)

      They sent me this reply about their baking sticks:
      _Regarding our Earth Balance Shortening Sticks... we are no longer manufacturing this product as it has been discontinued. Discontinuing an item is never an easy decision for us. However, based on lack of demand at the retail level; this item is no longer available._
      So maybe the buttery sticks are still available. It's very hard to find non hydrogenated, GMO free, vegan baking fat. I tried using coconut oil without success - maybe I used too little, so the crust became very hard after baking.
      I guess people are still baking with hydrogenated fat or lard :-/

      I use cold coconut oil I put in a mold and freeze works really good for crust
