  • These steak fajita nachos on the griddle were literally the best nachos we’ve ever had… whether homemade or at a Mexican restaurant! There are a few secrets to making griddle nachos the best you’ve ever had:
    - Frying your own tortilla chips and adding Tajin seasoning and/or salt immediately when they come out of the oil.
    - Making your own quick refried beans using canned pinto beans, some basic seasonings, and mashing them up in a skillet.
    - Marinating your steak in our easy and amazing steak fajita marinade.
    - Making your own Mexican style smoked white cheese dip.
    Each individual component of these steak fajita nachos was incredible on its own - the smoked quest dip, the steak, the pico de Gallo, the fresh fried chips - and then when you combine them together it’s pure griddle nachos perfection!

    Lastly on my comment yesterday on the new star was to state that they are highly sought after I know all I was saying is never sacrifice quality for speed of production I will order yet another set. ALL MY COOKING EQUIPMENT I TAKE VERY SERIOUSLY AND I AM PICKY FOR A REASON I WAS MERELY MEANING THEY SHOULD HAVE TAKEN THE EXTRA TIME IN PRODUCTION TO. MAKE IT RIGHT AND WHAT WE BELIEVE IN AND PAY FOR !. THE BEST MISTAKES HAPPEN. BUT WHAT I SAW WAS NOT. IT WAS RUSHED TO PRODUCE QUICKLY AND THE CRAFTSMANSHIP I FEEL SHOULD HAVE BEEN BETTER THIS IS NO WAY RELATED TO THE FLAT TOP KING. HE IS A GOOD MAN ! And we all support and believe in him !     I've done corn or flour tortillas on the griddle or in cast iron skillet precut and great for chips or whole for great tostadas without using all that oil for deep frying. As always Neil another Awesome recipe

    Hey Neal. Butane stove on the side can hold the heat for a pot of oil. When I came back from South Korea, the mover's took mine. I have a much better pair of them now, especially for power outages, but they work awesome and give consistent regulated heat.!!!

    The whole dish is well done, but the one thing I appreciated the most was your use of the cast iron pan for the deep fry oil. As you and I have talked in back channels those folks who think that a flimsy aluminum pan is the ticket for that job don't know what they don't know. Yeah, they're disposable, being thin they heat quicker, but being thin they lose heat faster too. But mostly, they're dangerous; not every time, but eventually......

    If you dont want huge dollops of sour cream and guac. Add some greek yogurt or sour creme, extra lime to the guac and put it in a food processor for a squeezable guac creme. A little lime and salt for the sour creme and do the same thing

    Thank you so much for NOT using foil pans on the grill top for frying.
    BTW, a turkey fryer works amazing for tortilla chips. I know it's not an everyday event BUT if you have it loaded up and have the oil, fry some chips!
    Have you used the pickling juice from a can of pickled jalapenos to marinate the meat? So dang good.
    I dump a whole can of pickled jalapenos into seasoned skirt steak or even Tri-Tip. Delicious.
    Now I want nachos!

    As Amy points out... each individual component is perfect. That is so key to great cooking and results! Wow guys, this is a phenomenal recipe and I meant to comment on the Smoked Queso on the last video because there are so many Queso recipes and methods out there that suck! Yours is the real deal. I really only have two minor comment/suggestion (surprise!) and that's with the Pico. First, omit the salt and substitute it with powdered chicken bouillon. The other is once it's married, put it in a strainer so it's no longer soaking in the juice. Thank you for everything you do. One of my favorite channels for sure.

    What a great idea! Those look so banging delicious Neal!! I see that you use pineapple as the citrus ingredient in your meat marinade. That's also what I do when I make the marinade from scratch. So many people use orange juice and that's okay too but pineapple takes it to the next level! Thanks for the awesome video!

    That looks phenomenal! I like to take a few "chipped" tortillas and season and stick them in the toaster oven for a quick snack, covered in the cheese of choice! I should make that Queso dip and bottle it for future use! Ha!

    Making your own chips is a great idea. You add what ever you like but I think you should redu with homemade chili. It’s just a good flavor on top of nachos. Everything except refried beans because the chili has beans in it. The amount of meats added to nachos doesn’t matter. The more the better

    How long do you think smoked queso would last in the fridge after cooked. Mines been in there about 1.5 weeks. Does it spoil quick?

    Making this tonight instead of popcorn to watch you know what on TV. And I will be trying the refried beans your way. As for the Queso, it looks good but I'll stick with my recipe. But wait, NO HEAT Jalapenos? I didn't even know those existed. That's just wrong IMHO.

    Pit Boss customer service SUCKS. I bought a griddle cover from them by model number matching my griddle, it didn’t fit, and they said I have to pay to ship it back because it was my fault for choosing that cover. I will never by this brand again.

      UPDATE- After emailing the corporate office of the parent company Danson’s, another representative from Pit Boss called me and is sending me the correct one free of charge and I do not have to return the other one at all. They also encouraged me to join their affiliate group!

    For our postgame tailgates I do nachos on the griddle using any leftover meat from the pregame tailgate. They don't look as sexy as these but they come together super fast as you're really just reheating meat and melting cheese. I call mine garbage nachos. Yours are the exact opposite of garbage.

    LMFAO - the "King" must not have ever learned that Chuck steak can ONLY be made tender by slow cooking to break the tendons,cartilage etc. down.

      LMFAO....Scotty must learned we had not problems with the chuck steak...that what happens when you slice thin and then against the grains....thus making it tender...
