    Hi Heidi, This was so interesting. And I was fascinated by how you soak your berries in a jar. I usually soak mine in a bowl, then sprout in a strainer. But I think the jar method looks so clever. I have never tried that but am curious to give it a try. Yes - the white wheat definitely has a more mild flavor. And spelt is my favorite. It really bakes up nice. I like to coarse grain it and sift out about 25% of the bran to make it a bit lighter to bake with. I want to look into these gamma buckets and lids. I also want to look into Glory Be (Spelling?) for grains. I too would be interested in a good oxygen absorber. I'll be following the comments! :-) Oh yes - isn't it the truth to do an inventory and keeping a ledger as to food storage - and YES - best advice every...only buy what you and your family will eat.       I had actually forgotten I had spelt even though I love it, I think it was having to toss that whole other 50 lbs I had but I did, thankfully, have the other ones and now am incorporating them into my wheat berry blend. I still use mostly the hard wheat but add a bit of the soft wheat and spelt to it. Seems to be making a real nice bread. O yes - I am loving the bread whisks too, thank you!

    Great ideas! Another point against oxygen absorbers is that you can’t use those seeds for sprouting. Part of my preps depend on sprouting in the winter months, so I need them viable.

    Heidi, thank you for this info. Have you ever cooked your white rice and than dehydrated the rice and it then becomes instant rice and cooks so much faster with less water. This makes it so much easier in a emergency situation. I’m going to try it and store it for future use, RUclips has videos on it, God Bless💚☘️

      I was thinking of doing that next time I cook up a bunch of beans, take the excess and dehydrate then powder, seems to me it may be great for making "refried" beans with :D

      I like to do this with brown rice. I cook a whole bag (a small one) of brown rice in my pressure cooker. Then I spread it on my dehydrator trays and dehydrate it. Once it's dry, I break it apart a bit with my hands, put it into canning jars, and seal it up. It saves a lot of time when I want to cook up just a couple servings later.

    I had an infestation of some bug... maybe it was weavels....throughout the house. I finally tracked down the source to boxes of Einkorn berries. The ONLY grains I ever stored strictly in their original boxes- with windows. I usually keep everything better protected in glass or plastic buckets because we occasionally get mice. I have no idea what I was thinking when I put them on the shelf downstairs!
    What actually worked for me, and I think I'm finally rid of them after a year, is foraged clear plastic disposable beverage glasses from fast food, coffee shops etc. Also foraged clear plastic lids and bowls from store items. They seem to be drawn to plastic, especially the clear plastic. And just to be sure they don't leave again I pour a thin layer of cheap vegetable oil in the containers. The containers get absolutely black with bugs!

    oxygen absorbers - I don't remember where I bought them but reputable places will have a little color oxygen indicator in the vacuum sealed bag to see that there is no oxygen leak and the absorbers are still good.
    Since I don't trust them not to go bad quickly I take out just a few that I will use right away and vacuum seal the rest in a jar. Since most of the oxygen is sucked out they should keep well - better than in the original plastic bag.

    I am thinking of starting to get and store wheat berries. My question, and maybe you said and I missed it, is how long will what berries store? I know that it will depend on the conditions. My middle son is heading to college and his room is becoming a pantry of sorts. I know that I can close his heat duct to keep it cooler in there and keep the windows covered to keep it on the darker side. But honestly I want to store for long term as well as using right away. (Never thought I would hear myself say that but as I grow and see how things are happening I think it is best.) Also, if it would ever be necessary, would the stored what berries still be viable for growing wheat ?

      If storing conditions are optimal, I would think they should store well for a good many years as far as being viable, that is a great question and one I should look into myself

      If you want to have viable seeds don't use a oxygen absorber, just vacuum seal in jars. Hard wheat, rice, beans, sugar, honey are some items that have a 30 year shelf life if stored properly.

      @@cf-ry1zo hard white and hard red wheat berries are best for breads. You can make bread with some of the others too but soft wheat berries are normally used for things that do not need to rise like pancakes or biscuits.

    If you won't use it, it was a waste of money. Period. I wish I could get my son and DIL on board with that idea.
    Weavel infested grain is gross! But it would be a good chicken feed in the end. Better than throwing it out. Good video, thank you.

    we do the same as you do. We have been doing this for many years. Bean, Grains, Oats, Rice Pea's We have used Oxygen absorbers and we purchased them many years ago, and I don't remember we we got them.

    Thank you so much for this information on the brake bleeder tool. Ive had a sealer machine and it didnt last long.
    I went to 3 different auto parts stores cheapest one i found waz $35, then 50. And also "$68. So i came home and bought using your link and also go a new wide mouth jar sealer for $28 with free shipping.!! I am indebted!! Thanks for this great off grid tip.     A very good way to store in 5 gallon buckets or even 2.5 gallon buckets is to gas it with dry ice. When the ice melts it produces a gas and the gas is heavier then oxygen so it actually sinks down into your bucket. You only need about a 1/2 cup of dry ice to do this. Very efficient. But be careful when handling.

      If you leave a little head-space in the bucket, make a little dent and place a small (birthday cake) candle upright in the grain, light the candle and put on the lid tightly. That burns out all free oxygen and weevils can't live in there. I've used 3yo wheat (that came straight from the header/harvester) and was still perfect and fresh tasting. Works in Australia!

      That is a good question on the psi as I have wondered this too since I got the idea from Brad over at Big Family Homestead a couple of years ago. I often go higher than that anyway just to be sure.

    thnx 4 the tip on costco! we didn't know u don't have 2 be a member OR have a business or that u can order online- i'm a very big fan of free shp, because everything gets shp in here, lol- if u haven't done so yet, check out azurestandard.com- i used 2 buy from honeyville, but not anymore, n i avoid amazon as much as possible, lol- although i did use your link n got the brake bleeder deluxe set after watching your vid- even my mate agreed w-that one, wow, so he will use it- we don't have any close box stores, so i buy mostly online- ie its 130mi one-way 2 the closest costco n in an adjacent state- closest wallyworld is 60mi n not worth the fuel 2 bother- thnx 4 all y'all share n Father Bless!

      I have checked out azure standard but there has to be a co op and there are none here. I contacted them and tried to see if we could set one up here as I know people here would love to have that but they never got back to me after I filled out their form. I took that as they were not interested in doing business with such a remote town. That is the downside of living where we do. Yep, the closest walmart is also about 60 miles from us and the closest Costco is 75.

    I know you use a vacuum sealer (or attachment) to make sure your jars are sealed GOOD... I have a Seal A Meal (not a Food Saver that allows for attachments) and I want to find a vacuum-like sealer that I can use without having to buy special lids. Any suggestions?

    5 yrs ago I put bay leaves in my rice and vaccum sealed it. When i went to use it the taste of bay leave so overpowered the rice it was HORRIBLE! the rice tasted like the bay leaves and as u know rice is an absorbent....ugh. never again for me.

      Rain Country - perhaps because I vacuum sealed it? The flavor may have concentrated into.it over the years??? After that I've never used bay leaves and my storage is still intact. I do freeze the rice/pastas before storing.

      Ah, could be, rice is the one grain we cycle through the quickest so I do not store it like I do the other grains so that could be why I have not had an issue

Newbie prepper this year and I wanna go NUTS Sooo bad!!!🤣🤣🤣 i'm trying to contain my eager excitement and learn much before going to cray cray!🤪🌾🌾🌾 2 here also, plus our 21 yr old son from time to time when he's not chasing hurricanes. Glad to hear about the bay leaf infusion.... i'm assuming ....it was because it was sealed...may be better to use in a worker pantry. I recently talked to our local Mercantile. She said she grew up on a rice farm, and her dad taught them to put sticks of wrigley's spearmint gum (in wrapper) and it totally does the trick. I assume non sealed. Long term I hear freeze 12hrs...thaw to room temp before packing....
      or
      dry canning...bake in jar 225° 95min...seal lid while jar is hot.... seals great too.

    Is there a particular kind of wheat you suggest for health quality? It seems like you mentioned in one of your videos.

      It is really up to the person and their needs. People that have gluten sensitivity should go with spelt as I had to relearn about it and found that while it has gluten, it is easier to digest. I try to stick with only organic and non GMO grains no matter which ones I use. My personal favorite is hard white wheat as it grinds up quickly (unlike softer grains), works well in anything I need it for, and has a mild flavor unlike the red wheats

      Pretty sure I listed what I store but what is best for us in not necessary best for everyone else. However, if I had only three grains I could choose to store it would be hard white wheat berries, oats, and white rice

    Can tattler lids be used for vaccume sealing dehydrated food for food storage safely? I have tried looking it up and get mixed thoughts. What advise would you give. Please. Thank you God Bless. Jenny

      I have used tattler lids quite a bit for vacuum sealing but depending on what it is, it they do not always hold their seal as well as the metal ones. However, I have coconut I vacuum sealed into jars back in 2014 with the Tattlers and they are still sealed

    Hi Heidi..me again...i went to see Stacy with the flour soaking ..a good thing for pan cake ..but i think it is better to soak the grains if you need to have the flour for bread... but the problem for me i don’t have a grind mill so ...i do have a dehydrator ..and blenders..could i use ...my blenders to make flour?...otherwise ...how should i do to make my bread ....with soaked flour?...cause if i do use those 2 cups and 2 cups of yogourt ..the other flour i would have to add will not be soaked...🥴🤔
    that is why i think for me would be to have the grain soaking like you do....and dry them grains...it is true that i did my bread un soaked sometime ago .,did love it ..,i bought until now my bread in my organic shop which i doubt they do the soaking..so if you have an idea how to make my bread with the soaking flour thing ..Hihihih ... it’s not in a hurry... thks a million and million ..well yes i exaggerate but thank you anyway..hihih

      I have personally never tried making bread with soaked flour and had the same questions about it as you did. That is why I went to buying the grains and the grain mill. I doubt the blenders would be able to get the grains fine enough for a bread flour

      What it really boils down to though is taste and preference

      I really do too, I found it for $2 at a garage sale and it had never been worn. I only wear it when I go out or for shooting videos though, I do not trust myself in white when doing chores....or pretty much anything else! haha

      That is what I do, some prefer to freeze first to kill any bugs or eggs that may be present but I never do

      @@RainCountryHomestead Thank you! Leaving in the package and putting in a food grade bucket will save time and lots of jars! I didn't realize beans should be frozen first. I dont have many buckets. And the ones I do have only have the snap lids. My grocery store is not giving out any more buckets. Thanks again.

    Off topic a little. I could not sleep so I made your peanut butter granola. Cooked it a little longer to get it good and toasted, and good and dry. I liked it.
    P.S. do you grind your own cornmeal. I want to try making cornmeal with non G.M.O. popcorn. I have heard it makes pretty good cornmeal. I don't have a grinder but I am interested in getting one. Thanks for the videos.

      Interesting you asked this because we have the popcorn we grew from last year and plan on grinding it into cornmeal soon. We have a special corn and bean auger that goes to our Country Living grain mill so we will be using that. We will do a video of some sort on it and also on how we like it used in cornbread

    After I open the oxygen absorbers i put the rest in a canning jar and use my food saver to take the air out and seal it that way. So you would use your break bleeder. Take care.

      Yep, I have done that very same thing but I think I had a bad batch of oxygen absorbers because they did not work fresh our of the package or the jar

    Put your oxygen absorbers into a canning jar right away and then vacuum seal. It takes the air out and allows them to last until they are needed.

    Finally got a break bleeder, and the hose is bent in 3 places, I found it hard to get jars to seal.

    I would like a worker pantry.... meaning we use it throughout the year. Is it necessary to seal or even put in a mylar bag, freeze etc. if we will be dipping into it as needed and refill as needed? I would like to use buckets with gamma lids for my worker pantry. Beans, rice, flour, oats...
    I am working on long term as well which will be sealed.

      I have buckets of grains that I am constantly working on so those ones are not sealed but are kept in the big buckets. Though I do occasionally rotate my grain buckets, the ones that are well sealed that I know will be good for years to come, I pretty much leave those alone.

    Hi ya Heidi! Awesome video!!! I’m curious on the rice and freezing of grains. That bucket of rice u say u eat soon, that a lot, how long does it take to eat what’s n the bucket??? Also, I hear of people freezing the grains before storing, I’ve never done it but cannot get my mind off of when it’s pulled out of the freezer that it will sweat, what do I do about the sweating??? Thank u much

      I have not paid any attention to how long it takes to go through the rice in the coconut oil bucket. We do tend to eat a lot of rice though compared to other grains. I have the same questions on the sweating thing when freezing grains, seems you would need to spread them out and let them dry before putting them away again and who has that kind of space?

    I have a question about using Foodsaver sealing and storage of Instant rice. Does the Instant rice save as well as regular ?

      I can only assume so as instant rice is only rice that has been cooked and then dehydrated.

      Thanks, I have not seen anyone comment on this so was just wondering because it cooks quicker in a emergency situation. Especially if one is trying to conserve fuels. @@RainCountryHomestead

    If you use oxygen absorbers nothing can live in the jar, can or bucket without air, so no bugs. Also, the foodsaver works great taking out oxygen. Very informative video Heidi!

      The trick is finding oxygen absorbers that work and are well packaged. That frustrates me!

      I have never had a problem with oxygen absorbers. But the minute I open them they go in a jar and I use my Foodsaver to seal it and then the same everytime I use some! Hope that helps!

      I did that same exact thing with the last ones I got, I think I had a bad batch all together - they did not work even fresh from the package nor from the jar after sealing quickly and sealing every time I took more out. I finally tossed them

      It can be in addition to, but I don't freeze so I use them as a replacement to help keep the bugs out

      They would have had to been present in the grains (or at least the eggs) when purchased, this is why some people will freeze them first before putting them up for long term storage in order to kill any eggs or larvae that may be present

      It may annoy you but I say it because you may be surprised at how many do NOT see it or get how to find it and even with me saying it and pointing to it, some STILL do not get it, so as annoying as it may be to you, I will keep saying it for the sake of those who need it.
