I actually do have a trick, for the less patient people who don't like fumbling with the fat layer first!
Storing the bone broth jars upside down while cooling off makes the fat solidify near the bottom of the jar. So after cooling you can go right in for the bone broth without having to scrape off the layer of fat first! 😄

HOLD UP. I did NOT know the lid notch trick! We don't have an oven or stove, so I literally cook every single one of our meals in this thing and I've just been awkwardly placing the hot lid on the very limited counter space we have LIKE A DUMMY for literal years. Thanks for the tip, Martina! 😭💕
As for bone broth tips- I personally buy an organic chicken, cook it in the instant pot with enough water to just cover it (30 minutes on soup setting, then 30 mins natural release), and remove the chicken. Then I add only the bones and skin back in with a splash of apple cider vinegar and seasonings and cook it on high pressure for 2 more hours, let it naturally release, strain, and tada! I mostly use my broth for making rice or pasta because I'm weird and dislike soup, so I tend to flavour it the same way each time. Bit of fresh basil (preferably Thai!), pinch of turmeric, a few chunks of ginger, salt, black pepper, and bay leaves 😋

About the pre-cook/Impurity thing, it is also about the blood and stuff stayed in the bones/meat, which also bring often an uncomfortable smell or taste to the meat/soup. Of course how strong this smell is also depends on the kind of animal, and/or the method and the fodder used. So a lot Chinese chefs pre-soak and rinse the meat or bones to get the stuff out before the pre-cooking part, or instead of the precooking. Because the cooking/boiling brings more flavour away, depending on the kind of meat/bones used, sometimes a pre-soak is an alternative/better way.

I'm going to have to make this. I ate pig ears from a Chinese restaurant and it helped normalize my digestion after gall bladder removal. I'm going to have to make this soup this weekend.

As a person with mental illness, I'm literally so amazed that you can do all of this elaborate cooking! Cooking is such a chore for me and my attention span is ZERO.

Hey Martina! This looks amazing. I believe the parboil is to get out impurities like extra blood that could make the final product spoil faster and make it cloudy.

Hey Martina! I’ve noticed that some people put their bones in the oven/ broiler to brown them, hope this helps prevent unnecessary wrist movement 🥲

I totally would eat the jello-y broth though. As long as it's well flavored, I think it tastes pretty good.
Also my guilty pleasure snack is eating the jello-ed broth from refrigeratorated rotisserie chicken. 😅

Hurrah! Mine is too small honestly, it’s quite a pain to make double batches so I’d recommend a bigger size pot if you have the space

I had a proto-Instapot in college, it made hot water but was large enough for a package of ramen or half a box of macaroni and cheese. They let me have it in our room, but didn't let our neighbors keep their microwave because they could start a fire. I bet you can hear that little jingle when the lid closes up and down the halls these days.

I love using my instapot to make chicken broth. I make pho ga, chicken soup, Mexican chicken soup & just freeze extra soup for other recipes.
