What is the best way to focus and get the correct balance if using your hands to cook?

I would set the focus beforehand, then lock it off (switch to manual) for your shoot - if you try to use autofocus it will be constantly searching / going in and out of focus as your hands move).

I still have my m50 and want to do selfies with self timer. But the camera goes out of focus when I step back. I have it tracking me. But it does follow me when I have set it to self timer. Any advice. I am tying to use my canon 50mm and 22mm lens

You can use a stand in (someone else) to focus on, then switch the lens back into manual focus (so it doesn't move). Then, make sure you are standing exactly where your stand in was.
