Hi Tibor, I'm back from our summer in Maine, a good time was had by all! Turn on my 55" TV and what do I spy... my favorite... RAVIOLI!!! Being second generation Italian/American this stuff runs in my veins since very early childhood... It's 9:00 pm here now and I'm ready for a snack... sending my broom for a flyby... Set out the hook with my share of the samples please! 😂 I grew up with the traditional versions but a number of years ago I had lunch at the Marriott Hotel in Washington DC. Another idea... The Chef conjured up a spinach ravioli stuffed with a lobster filling and topped with a delicate white sauce... "ambrosia "! I went back for thirds... waited for someone to throw my piggy self out!!! 😂 Like you, I'm always thinking about variations... I'm off to raid my fridge before I eat a table leg... It really looks great and I can imagine how good it tastes because I watched how you prepared it from scratch to finish. When I was watching your video of the service, I kept saying to myself that it needed sliced basil as garnish to finish on top of the raviolos. I wish I could've tried it. I love homemade Italian food. My Grandmother came over on the boat from Naples area at the end of the 20th Century our family's last name is Montani. We had fresh Italian food made by my Grandmother and her sisters for the family every Sunday after Mass. I truly miss those days badly. Great job and thanks for the memory.
