We use I don't know just to say we don't know nothing about something. An expression that we use more often is "bueno", actually it's a word... But it has different meanings, like something good or it could mean that you are going to start saying your opinion about some topic or finish a conversation.

South Korea has exactly the same expression. Sometimes we put ‘I don’t know’ before or after we say something 🤣
