Cooking with black truffle! Fine dining amuse with oxtail, pommes soufflé & baba

- Hey guys! Today we're going to cook with some delicious Australian winter truffle, but you can use these recipe with other truffles as well. We're going to make a pommes soufflé ring that's stuffed with a truffle cream, an oxtail glaze and if you're having some trouble with pommes soufflé then I'm also making a baba au truff! It's so good! All great recipes, so enjoy guys!

Usually I make Croquembouche as a sweet version with the coffee. I would be very interested in a savoury version as a starter, for example with an oxtail meat filling and Nori- caramel.

Hey Jules, would it be possible to either not glaze the truffles at all, or glaze them with something different than the oxtail broth?
