Wow. First time seeing a milkfish being cut like that. Usually I only see deboned "bangus" (what we call it in the Philippines) instead of premium cut of only milkfish belly.
Seriously?most of resto in phil they have sizzling bangus belly,sigang bangus belly
@@airfire1078 maybe he meant in the markets. I also don't see those selling just belly. I'm going to assume the restos just request those direct from the suppliers.

Or time of year,temp control etc......I have no source of water,food or garbage but have flies part of the year because I live in the mountains and that's just the seasonal bug.....but I can appreciate what you are implying

嘉義東區市場也有一位攤販專賣虱目魚,也都是這樣殺,技術都很強
Молочная рыба или с-муи, как ее называют тайванцы вкуснейшая рыба. Некоторые ее недолюбливают из-за обилия мелких костей. Но уличные торговцы и в ресторанчиках научились удалять эти мелкие кости. Но если вы купили рыбу в супермаркете, то вам ее выпотрошат, но с мелкими костями вам придется помучиться. Тут два подхода: 1. Попытаться самому удалить кости. Но для этого вам надо хорошо знать анатомию рыбы. 2. Просто тщательно пережёвывать рыбу выцеживая мелкие кости языком.
Стоимость средней тушки рыбы в супермаркете - 3$. Хватит на две приличные порции.

Я просто в восхищении. Всю жизнь живу в Беларуси, Минск. Что удивило. Кафе стоит прямо на улице, повар прямо на улице свежую рыбу красиво разделал, мастерство дострйное Оскара🙃. Столько простых вкусных блюд приготовил из разных частей рыбы. Любой прохожий может заглянуть и супчика поесть. У нас же такой административный ресурс мешает работать рестораторам. И санстанция придет и администрация и пожарные на газовое оборудование и все напишут замечания. Грусть.

Батька запрещает рыбу резать.
Инстанций в Тайване нет. Чисто само собой и тухлой рыбой не кормят, потому что культурные. И пожарных нет. На фиг в Тайване пожарные? Не горит же никогда ничего. Поэтому, и меры безопасности не нужны. И штрафов нет. Можно смело впаривать тухляк, никто и слова не скажет.

Most folks in the US would throw 50% of that fish away saying it had too many pin bones.
You're probably right we would throw it away. Too much work for such small amount of meat. I spent 4 weeks in Taiwan in 1999, I saw people throwing fish just like this on the ground and then picks it up and place it in a wok. Twain is one of the nastiest countries in the world and they are rated a top 5 country for food poisoning (WHO 2021).
@@big_al8164 That's 23 years ago isn't it? BTW WHO doesn't even recognize Taiwan as a country, where does your data come from. Taiwan has a food safety level about the same as Japan and Korea, also surpassing China, its near rival.
