I got this infrared temperature probe to help measure the reflow temperature when using my hot air station.

Are both measuring ranges up to 800c or onle the thermo couple?

Can it measure cold air like a/c or fridge?

It measures the infrared radiation coming off of a surface. It would not be a good choice for measuring air temperature. However, it would be able to measure the temperature of an object in the path of the airflow
