Great recipe idea. One suggestion if the idea is to make it healthier is to reduce the amount of brown sugar by half. The fruits and juices are adding sugar as well.

I use oats flour and dates instead of sugar trying to make it healthy and diabetic friendly

You should mix flour in the fat mixture first then fold mix the liquid in it little by little. Thats what went wrong in this. Thats why the underbaked texture. It got clumpy.
