Corn Fritters with Cajun Spice and Chipotle Chilli

Corn fritters made with fresh corn kernels from the cob. The distinctive flavour in this recipe is cajun spice and the smokey chipotle chilli powder. But you can use any other combinations really, like cumin, coriander and aleppo chilli. You could also leave the chilli out altogether and instead, serve the corn fritters with chilli sauce on the side. The chilli that I have used here is not spicy and lends a nice vibrant colour contrast in the fritters.
