I went 1/4 inch vent at the bottom, 1/2" up top for a 180 degree ride started at 20:30 and rode that overnight to 09:00 the next day when I opened the vents to 1/2" at the bottom and 3/4" at the top and rose the temp to 250-275. wrapped at 12:00 until 14:30. rested until 17:30. 18.5 hr smoke and it was awesome!
You can knock off a few hours of cook time by wrapping in tin foil during the stall. The bark is not as nice, but you can eat at a reasonable time. Looks amazing though!
I just did one the other day! I used the rub recipe from Serious Eats, but left out the oregano. It was the best bark I’ve ever gotten. Do you ever slather with yellow mustard? Why/why not?

I’ve only ever done it once and don’t out of laziness 😂😂
How is the iKamand holding up? I know you had issues in the past...
You said you started at 9am what time did it actually come off the smoker and hit your plate?
About 7 pm. Took 10 hours

Man next time wrap it. You’ll be eating in 8 hours or less. Also, the foil boat works great without messing with that bark. Cheers
How did the Joe do with your lump? Six you have to reload at all?
i've gone 18+ hours with an initial load up to the deflector plates with no issues at 225 degrees F
