I enjoy this dish with tofu or paneer(I add veg broth to account for the liquid released by the chicken) every other week. I would add to your suggestion if you don't have curry powder add turmeric powder (to get the color). looks like I'll be cooking it this week :)
Wow how come Indian and Nepali food is just so amazing? It’s that good I went to Nepal last year and have learnt and keep learning from Gurkhas. So if you want me to put comments in Nepali just ask as I know it’s similar to Hindi but I also know it’s not widely known since Asian countries are so special and amazing there’s different languages 👍🇳🇵🇮🇳🇬🇧

I take it those chicken thighs must be from a butcher rather than a SM? They look nothing like the small, fatty one's I get from _any_ of the big SM's...
I feel so much better about using premade curry powder now! I love curried egg and chicken salad for sandwiches, so it is a staple in my pantry.

Either would work well maybe toasted for extra flavour as I’ve done this before it’s mad

Get the frozen cubes of garlic and ginger. The pastes are full of vinegar and can give a strange flavour.
