The first issue is everyone turned to mushrooms to make a vegan dish. There’s so many better options out there to explore and not all of us want mushrooms in every dish
Dude at 1:15 explain everything he wanted to do with the shrooms to make it taste like duck liver, why he wanted to do it and the result he was expecting, then tasted the product he made and said it tasted like shrooms. Mad respect!

@connie yes but the French especially are holding onto traditional wine making whereas most other markets have developed products for the vegan market. I am a beverage director for a restaurant group and have worked as a Sommelier and have been in a spirits/wine based position for 20 years.
when i hear vegan i expect colors, blend of beautiful veggies, tofu and not mushrooms..in return what i see is simulated non--veg dishes mostly brown colored and filled with boring mushrooms....ehhhhh
I precisely loved that in the potato scallops, I would totally have tasted this one above the others ! But to be fair, the brownish winning stuff really did look like some very french wine-based mix (huge coq au vin vibes). French classics I remember from my non-vegan childhood were not colorful or anything... That's why a new vegan wave would feel so refreshing !
I haven't consumed meat in 45 years! there is so much delicious foods without killing an animal.
You mean without eating the animal. Because even if all you eat are plants, plenty of wild animals are dying for those crops.

i think under the time constraints, mushrooms are the fastest and easiest to go for maximum flavour
