    Lentil Sausage Soup
    Ingredients
    * 2 cups green lentils
    * 3 medium carrots, diced
    * 1 onion, diced
    * 3 ribs celery, diced
    * 5 cloves garlic, minced
    * 2 Tb avocado oil
    * 1/2 lb smoked sausage, cut into small pieces (I used a smoked beef kielbasa)
    * 1 bay leaf
    * 1 qt bone broth (I used chicken, but pork or beef would work too)
    * 3 cup ripped kale, stems removed
    * 1/4 cup white wine (optional)
    * salt and pepper to taste
    1- The night before, pour dry lentils in a large bowl. Cover with warm water and 1 TB lemon juice or apple cider vinegar. In the morning, rinse the lentils and set aside.
    2- Heat oil in dutch oven then add in the carrots, onion, garlic, and celery. Saute until softened.
    3 - Add in the sausage, bay leaf, lentils, white wine, and broth. Cover with a lid.
    4- Simmer either on the stove or in an oven on low heat for at least 2 hours. Alternatively, you could put it in the slow cooker for several hours.
    5- Add in ripped kale and stir until combined. Season with salt and pepper to taste.
