Everything You Know About The Whiskey Sour Is Wrong

  • Brian and Jason have never had a real Whiskey Sour, so Trever returns to teach them in a hidden bar.

    To make your whiskey sour, what you'll need to do is:
    * pour 2 ounces (59 mL) of whiskey into your tin
    * pour 3/4 ounce (22 mL) of heavy simple syrup into your tin
    * cut a lemon in half
    * squeeze the half lemon over a strainer into your tin
    * crack open an egg and isolate the egg whites
    * dry shake the egg whites in a lateral motion for 10 seconds
    * mix your alcohol and frothed egg whites into your tin
    * add a cup of ice
    * shake vigorously for a little less than 10 seconds, breaking down the proteins
    * pour
    * garnish with a maraschino cherry

    I always thought, historically, that whiskey sour was just whiskey, simple syrup and lemon juice, and then some years later the Boston sour came, which is a whiskey sour with egg white, decorated with angostura bitters on top (later on)

    The worst is when I have a bunch of tough guys at the bar order a whiskey sour and I ask "would you like it with traditional egg whites?" and they all go "ew what egg, no!" and get all squirmy lmao

      That would be common because most people in the general public have almost no basic general knowledge about cocktails. Also most average tough guys would not order a cocktail. It would usually be beer and maybe some shots of cheap whiskey.

    Well done. I just had my first whiskey sour made proper, and man, what a difference. Correction, I've made five now and have experimented with bourbon/rye, bitters and no. I liked the rye without orange bitters, as a clean simple sour. The ones made with bourbon really came to life with a shake or two of orange bitters. These were certainly my favorite.

    Just made this for myself. Delicious!!! I subbed the heavy syrup for 1oz 1:1 simple syrup, but otherwise it's the same. I honestly didn't expect this mild of a sour flavor (like I expected it to be more tart/sour) but I'm happy with this. Never making a whiskey sour any other way lol

    Awesome! I make mine pretty much the same way. Only thing I do different is add a splash of bitters on top at the end. Also, I like to use half simple syrup and half maple syrup!

      taht is actually so true. i dont think i have ever seen a sweet and sour mix in that country. you can find those in spain a lot, ibiza etc but it tells you a lot about the quality....

    Just made it, I like it. Having the egg white and simple syrup give it a bit of thickness so you arent drinking just lemon and whisky like most places do.

    Was taught to make a "Whiskey Sour" using Sprite, Lemon, and Whiskey... wasn't bad, but the Sprite made it a bit "airy" if that makes sense. Learned the proper way w/egg white a few months ago and I can confirm that this is indeed the best method to making a Whiskey Sour. Yes it takes a bit more time, but the taste is well worth it.

    You should read Dave Arnold's book - Liquid intelligence... That sour had some weak emulsification. Try a reverse dry shake with a large ice cube, and a proper throw, then dry shake, then youll get a great foam and slower settling... Also, adding bitters and a vanilla simple makes it taste like heaven...

      They did a regular dry shake. Reverse dry shaking is dry shaking *after* shaking over ice. It makes the head more frothy than a regular dry shake.

    This looks awesome. Any recommendations on which style of whiskey works best? I know they used a Kentucky Bourbon, but I'd be curious to try a few other styles as well.

      I tried it with both Jack and Maker's Mark, personally the Jack made it very potent flavor-wise and I didn't care for it until I added an ounce or two of water.
      Had it at a bar and they used Maker's Mark and it was much better.

    Just as a heads-up if you don't have heavy simple syrup, use 3/4oz of standard simple and one sugar cube, which you add to the dry shake. Beat the shit out of it.

    I'll be honest, I just tried this recipe, except I used my favorite Islay scotch. One was not enough.
    Will suggest an ounce and a half pour of Bruichladdach if you want to use it.

    I have eatten raw eggs before, didn't get sick so I'm guessing most eggs would be safe nowadays anyway ( hint to eatting eggs raw, run it through your teeth to break the yoke so you don't throw up :) )

    Botch it some more, guys. In a chilled glass, 2 oz whiskey (rye or bourbon, 1 full lemon squeezed, 1/2 oz simple syrup (demurara or gum), dry shake, wet shake, angustura bitters, and orange peel rim, and zest, drop in--no cherry. simple. In a tumbler. If it's a tad short, add a tad of ice. Simple--classic.

      It’s because most bars nowadays just use premade Sweet n Sour mix and don’t use the egg white or lemon juice at all ever think about that dumbass

    * No Inverse shake?
    * If was a Rum base from the beginning why the official way is Bourbon?
    * Bitters were never a feature even when possible dates?, (that was not explained), or why now on days was used?.

    many store bought eggs today are pasteurized, so the risk of consuming them raw isn't much of a concern.

    If you are afraid of raw eggs you can buy pasteurised egg whites, no need to even separate anything.
