- Chilly Chicken:Ingredients:- 500g boneless chicken breast or thighs, cut into bite-sized pieces- 1/2 teaspoon cornstarch- 1/4 teaspoon salt- 1/4 teaspoon black pepper- 1 egg. Vegetable oil for frying- For the sauce: - 2 tablespoons vegetable oil - 4-5 garlic cloves, minced - 1 small onion, finely chopped - 1 teaspoon grated ginger - 1 tablespoon soy sauce - 1 tablespoon tomato ketchup - 1 tablespoon vinegar. Salt and pepper to taste - Chopped onions and bell peppers for garnish Instructions:1. Marinate the chicken: In a bowl, mix together flour, cornstarch, salt, black pepper. Add the beaten eggs and mix well. Add the chicken pieces and marinate for at least 30 minutes. 2. Fry the chicken: Heat sufficient vegetable oil in a wok or deep frying pan. Remove the chicken from the marinade, allowing excess to drip off. Fry the chicken until golden brown and cooked through. Drain on paper towels.3. Prepare the sauce: Heat 2 tablespoons of vegetable. Add the minced garlic, chopped onion, and grated ginger. Stir-fry until the onion is translucent. 4. Add the sauces: Add the soy sauce, tomato ketchup, and vinegar. Stir-fry for 1-2 minutes, until the sauce thickens. 5. Combine the chicken and sauce: Add the fried chicken pieces to the sauce and stir-fry for another 2-3 minutes, until the chicken is well coated with the sauce. 6. Season and garnish: Season with salt and pepper to taste. Garnish with chopped green onions.
