Nice vid, I haven't tried this technique. If I understand correctly, you are popping the sheet, then give a bit of windward helm, and the mast falls when it falls. I couldn't get the link to work.
You get back in your kayak just the same way as you would without a sail. It is very easy to avoid flipping over. A little common sense is all it takes. Most people would do a paddle float re entry or assisted re entry. That is pretty much all there is to it. Except you are releasing the forestay, and turn upwind / away from the boom, and it will gently fall.
