The 4 years had multiple reasons though. First of all nobody expected COVID to happen. Additionally they could not switch out any important hardware parts they selected to build it because they were also set to implement open-source drivers and firmware for them as well as guaranteeing customers firmware support. Then another problem was that the SoC they use for the device gets used in the automobile industry as well. So they pretty much run straight into heavy supply chain issues.

The applications on it being open-source isn't even that impressive. You can get similar restrictions with FOSS Android ROMs like GrapheneOS which even go further with security overall. However PureOS provides you with open-source firmware and drivers for close to every piece of the hardware. It's pretty much impossible to get that with any Android device because hardware vendors lock down their firmware so heavily. So running a FOSS version of Android might come with limitations that you can't use your camera or some other sensors at all.
The Librem 5 gives you a pretty reasonable option in that case already. It could be more secure when it comes to multiple attack vectors. But in terms of privacy it might be the best option available. So hopefully Purism can continue with their project and make a further iteration addressing the shortcomings in terms of specs.

Android usually comes with big limitations though. The typical Android you get out of the box, isn't rooted. If you want to install whatever you want, you need to tinker with adb, developer settings or some custom FOSS store apps. You can't easily develop apps on your Android device while PureOS gives you tools like git, ssh, gcc and more from its repository. It's effectively a Linux desktop in the palm of your hands.

You can do quite a lot. You currently just need to tinker a bit getting things working depending on what you want to do. For example I have no issues using Signal and Telegram on it. Listening to music is totally fine. But you can also use it to enter your home server from terminal and reconfiguring it via ssh. Theoretically even some Android apps run via a compatibility layer on it. So it's effectively a Linux desktop controlled via touch screen.

Depends... The OS does not come with a permission model like Android. So in case you want to run some third-party software which you don't fully trust, it's very easy to restrict that. Also you don't need to trust the OS in all cases. After all even Android could have an unknown vulnerability which potentially leaks access to your camera or microphone. In such a case a hardware switch would still restrict an attacker.
Also in some countries you want to make sure not being tracked at all cost, even as civilian (for example during some protests). In such a case you can kill base band modem and wifi modem completely. So it's not possible to track you via your phone. But you will still have access to some functionality of your phone.
