Sir phenol and ethanol m we also applied s character rule?? Because of in benzene there is sp2 hybridization and in ethanol only sp3 it means phenol is more stable that rule is valid or not??

Phenol is ofcourse more stable due to resonance but when it comes to determining acidity we generally look for the stability of conjugate base .
