  • ground sirloin
    carne pacada
    2 onion
    2 green pepper
    3 jalapeno
    4 celery stalk
    1 tbsp mince garlic
    1 can fire roasted tomatoes
    2 tbsp tomato paste
    1 bottle chocolate beer
    4 tbsp chili powder
    1 tbsp onion powder
    1 tbsp garlic powder
    1 tbsp nutmeg
    1 tbsp Cajun seasoning
    1 tsp cumin
    1 tsp salt
    1 tbsp black pepper
    fresh basil, thyme, oregano
    1/2 cup brown sugar
    Worcestershire sauce
    second dump of dry ingredients are same measurements plus brown sugar

    super legit recipe! I appreciate all the fresh ingredients. I roast my own garlic (olive oil and quality butter). That's the only change I'd make.

    Just made this way too much brown sugar, way too sweet. 1 tablespoon maybe. I didn’t even add the chocolate beer that would’ve been insane. If you like really sweet chili then have at it

    I usually can find at least one ingredient that people miss with their chili recipe that would make it better, but not yours! You hit EVERYTHING! You pulled out ALL of the stops with this one. VERY nicely done! I'd LOVE to try a bite of this. Looks absolutely AMAZING!

    about what temp shoal I have the stove on for this. medium high or low?

      Medium to get everything going, then let it go low and slow

    I'm making this right now and I ran into an issue when I had to put the chicken stock in, how big of a container of chicken stock did you use? I put in a 32 Oz container and it seems like it might have been too much.

    Texas chili has no beans. Maybe Minnesota or California chili, but not Texas chili. Ever.

    Also really advise to add a little bit of apple cider vinegar and some cocoa powder, it gives the dish one more extra layer of depth

      Your favorite dark lager or stout will work just fine

    I just finished cooking this recipe as best I could. I added frozen corn. This is so delicious. Mind you, I am NOT good in the kitchen. Nor did I have the chocolate beer (I substituted Lifted Kilt.) I cannot say thank you enough for sharing this recipe. DELICIOUS!!!! Best chili I have ever made. Saving this recipe.     Why would you use chicken stock and beef boullion and not use beef stock?

      This is a common technique for national chili champs--adds depth of flavor to use both.

      I do for myself..... but I know a few people who are allergic to Cumin

    the idea with the chocolate beer is great! I usually do it the argentinian way with a bottle of red wine but for sure I add some pieces of dark chocolate too.

    How much meat and dried peppers? Amounts?

      I used 1 1/2 pounds of each meat which looked like the amount he put in. I started out with 2 ounces (as shown on the packages) of each type of dried chili but found it made about twice as much as he’s shown putting in. Same with the listed veggies. It made about twice the amount as shown on camera. The only change I made was to double the amount of beans. The recipe won me first place in my local chili cook-off!

      @@mobus1603 just a couple of tablespoons. Not much. But a little acidity in the form of white vinegar will make a world of difference!

      @@mobus1603 I'd do it to taste. Add one at a time, stir and taste. Don't let it get to the point where you can taste the vinegar- you just want a nice background acidity.
      You add it close to the end, so that there will be little reduction and the taste doesn't concentrate further
