Hi! I'm Harry Soo, a Grand Champion pitmaster from in Diamond Bar, near Los Angeles. Welcome to my vlogs, BBQ product reviews, travel & lifestyle videos, BBQ contests, classes, as well as interviews and stories.
On weekdays, I'm an IT nerd living a Dilbertesque existence in a fabric covered cubicle in downtown LA. I'm the head tour guide for a team of IT project managers who build datacenters, networks, servers, and infrastructure that helps bring tap water to 300 cities and 20 million residents in SoCal.
On weekends, I come alive as a pitmaster, competitor, and BBQ instructor. You've seen me on BBQ Pitmasters, Food Network, Chopped Grill Masters, Smoked, Cutthroat Kitchen, and local TV in California. My shtick is I've used a humble 18-inch Weber Smokey Mountain smoker to win 100+ first places and 1st place USA in the Kansas City BBQ Society (KCBS) awards including best chicken, brisket, and sirloin; and I've won over 30 Grand Championships. I've personally taught 250+ classes and trained 4,000+ pitmasters in small hands-on dozen student classes in the US, Sydney, Perth, London, Kuala Lumpur, Ireland, Germany, Mexico, Canada, and Hawaii.
I get many questions weekly about how to grill and barbecue. Since I started cooking professionally in 2008, I've answered thousands via email, so I decided to post my answers via video to reach a wider audience. I'll do my best to post a video on my channel periodically. I upload vlogs, BBQ product reviews, travel & lifestyle videos, BBQ contests, classes, as well as interviews and stories.

I love how detail oriented Harry is. I’ve always been a “cook by feel” guy, but I’ve had to learn my lessons the hard way. With Harry, he gives you the precise way up front so there’s little room for error. I love my way, but Harry’s way is amazing too! Love the vids, Harry, keep cookin!

I started using Walmart choice grade when they were 1.69 per lb and most came out pretty good. And that’s the whole idea behind BBQ is to take a tuff undesirable pice of meat and make it delicious. I have noticed most of these newer guys have forgotten this or newer knew it.

I am a long time subscriber and fan from New Orleans. I purchased a choice brisket from Sam’s and smoked it on my Oklahoma Joe’s highland smoker my wife and daughter purchased for me for Father’s Day. I smoked that 15lb brisket for 8hrs and then I put it into my oven at 210 degrees and let it go another 9hrs and it came out fantastic juicy beautiful and most importantly delicious.

Thanks for the highly informative video, Harry! I don't do competition, but probably 90% of my backyard brisket cooks (hundreds?) have come from Walmart. About half the time I'm able to get choice. A nearby grocer called H-E-B (I'm in TX) usually carries prime for $1 - $1.50/lb more. Only recently discovered it and have found it's almost always worth the extra price for a better end result. Keep up the great work!

Then wrap and cook in the oven until probe tender? My question is do you pay attention to internal temperature at all for a completely tender championship brisket?

A Select Grade brisket should be the same, no matter if you pay a butcher 7 bucks a pound or Wally World 3.50 a pound. If the meat is somehow "better" at the butchers then it isn't Select, it is upgraded to Choice. Of course there are differences between cuts even at the same grade, but learning how to select the brisket (another story) is more important than the source of the meat.

Thanks Harry, that was a very informative video! I didn't realize Walmart sold brisket. I usually avoid Wally world like the plague; now I'm going to have to go check it out. I've gotten pork ribs from there that also turned out just "ok".
Glad Mr. Beans is ok! I'm in Granada hills in the San Fernando valley. I'm probably 2 miles from the foothills & the coyotes have taken over the streets, especially at night. You can hear them yipping & howling out there & they've cleaned all the cats out of our neighborhood. We have 2 small dogs that are no longer allowed outside by themselves in our own backyard, because of the coyotes.
Mr beans is a VERY lucky dog in more ways than one now!
    Thanks Harry 👍

@@SlapYoDaddyBBQ I completely destroyed the first 5 briskets I cooked! Sick of wasting $ on expensive meat, I remembered a trick Harry talked about in a lot of your vids. As my 6th brisket was on the smoker I began violating a jar of peanut butter with a skewer! My briskets have much better since! I still have a lot to learn about briskets I think, I've only made about 11 or 12 of them.

Ryan Jensen his later videos have a lot about this. Depending on heat is how quick , beef and pork avg same time , chicken is a lot faster due to cooking higher. Normally 2-3 hours on beef and pork at 225F and don’t spray until bark has set or it’ll was off. Spray hourly until final 10F and wrap in butchers paper preferably to moisten the bark back up.
