I remember getting it in the 80s. My dad made homemade mac and cheese with it and what he did is melted a big spoonful of butter and put a whole can of evaporated milk where the whole block of cheese and 1 lb of macaroni and it always came out so creamy and delicious. I haven't made it any other way since and it still tastes as good as I remember it except we can't get that cheese anymore so if any of you have an Aldi store in your city or close enough for you to go to one, I say that cheese is the closest to the taste. Nothing is exactly the same but to me that is the best tasting compared to that I can't stand the taste of Velveeta so I will never use that. Thanks for bringing back a great memory of my dad. I miss him dearly. The good Lord has him now and I know he's making him some mac and cheese.
My grandmother always made her Mac & Cheese with evaporated milk. She used some mustard to season it too. (Again, can't remember what she called the sauce. Something Dutch, cuz she called things what her mother called them and my great grandmother came over from Holland & called things what they were "in the old country".

Like I said it doesn't taste like the government cheese did back in the day but out of the different cheeses like that to me this one makes the best mac and cheese. If for some reason they don't have it then I would go to Kroger and by their Nice and Cheesy generic brand.

More like Velveeta, I think. Half inch slab, with onion, and a thick slice of garden fresh tomato, sure was good. No mayo or mustard, just salt and pepper, as I was raised!

I like how you shred your own cheese all the pre shredded cheese uses cellulose to stop it from sticking together cellulose is wood fibres, plus it is also cheaper to do it yourself
I can't remember how when or where I learned that putting a green stick across the top of a pot would stop it from boiling over. One day in my kitchen my pot was just about to boil over & I looked around wondering how on earth I would find a 'green stick' to lay across the pot. I grabbed a long wooden spoon, thinking it might be green enough to stop the mess. Yea! It was! Disaster averted! For the last 50 years I've taught anyone who would listen this valuable use for wooden spoons. And for 50 years I have wondered how someone ever discovered a pot would not boil over if a "green stick" was lain over it! Boggles the mind! Have a Blessed Thanksgiving Becky!
My husband is in North Carolina this week (from Maine) volunteering for Samaritan's Purse (SP), doing disaster relief work to help clean up after Hurricane Helene. I hope people will be generous with donations to SP and I also hope people who need help will reach out to SP. They are a worthy organization because they do what they do in Je sus' name. To God be the glory!

Government cheese mac & cheese was the best! There are some food giveaways that give something similar today but it's not quite as good. I made some with it that my MIL received. She agreed it was good but not like the 70s cheese.
Most commercial cheese is plastic these days - V difficult 2source non-vegetarian REAL cheese made with Cow Rennet 👀 broke my heart when I did a deep dive
Hello Ms. Hillbilly, I made a mistake and added cornmeal instead of flour. I was wondering why it was taking so long for my rue to thicken, then I realized what I did wrong. I’m still serving it for Thanksgiving 😂!

I found it interesting that the Cavalry out west in the 1800's after the Civil War, issued Macaroni to the units as a staple food item. Makes sense!

Yes but it will be better to use Dijon mustard if you have it.
