Makes about 13 puris
You will need:
For the dough:
1 cup plain flour
1/4 teaspoon baking powder
1/8 teaspoon salt
2 tablespoons melted ghee
1/4 teaspoon lemon juice or white vinegar
Approximately 1/4 cup water plus 3 tablespoons water
Only add the syrup to the puri if your serving them immediately.
Syrup( optional)
1 cup sugar
1. 1/2 cup water
For spreading and sprinkling:
1/4 cup ghee
1/2 cup corn starch
Garnish:
coloured almonds for garnish
ground elachi
Canola oil for deep frying
Notes:
1. Make sure the syrup is thick with no strand formation.
if it is too thin, the puri will end up being soggy.
2. If you do not want to use syrup, sprinkle the puri with icing sugar and sprinkle ground cardamon on top.
This will ensure the puri stays crispy longer.
3. Only use the syrup if your serving the puri in within a day. They do not stay crispy after.
Sprinkling with icing sugar will make the puri stay crisp for over 2 weeks.

It works wonders. The best part is that you can use that oily flour in bits when making roti. So it doesn't need to be thrown away.

Hi there, this recipe looks great and I’m going try it out. I’m wondering if I made a thicker sugar syrup and slightly dipped them in then added the nut garnishes, do you think that might let them stay crispy?
Hi. The puri does not stay crisp a day or 2 after the syrup is added. You can, however, store it uncovered, which will help better. I highly recommend using icing sugar if you want it kept longer.

Im sure you can. However i have never done so. I would recommend checking the texture once thawed. Pop into a light warm oven to crisp up again if required.

Thanks for the recipe, what type of oil do you use for frying? Your puris are very white, i use sunflower oil but mine is a little darker even if i dont allow to brown in oil.
I use sunflower oil too. These need to fried on a very low heat.

You can skip it out if you like. Vinegar or lemon juice ensures you dont get bubbles in the puri.
Putting it in thick sugarsyrup a different sweet dish is made which is very popular in Odisha called Feni

Yes!! You will get about 13 puri from the 1 cup of flour.
Can I replace gee with butter?, how do you elimate the oilness 😢...
You can use unsalted butter. I've shown in the video how to eliminate the oil. Watch till the end.

Y vinegar or lime juice is added n baking powder
The vinegar or lemon gives it a nice crisp texture while the baking powder gives it that melt in the mouth feel. Hope this makes sense.
Slmz, I just tried this recipe and followed step by step but they haven't opened up any advise?
Seems that you did not add enough ghee and corn starch in between stacking the 5 layers. Please try it again once more. I promise it will come right.
You need to use two forks and separate the puri layers when frying. It opens up beautifully.
