Loved this soup! Didn't change a thing. Husband is not normally a fan of potato soup, just too bland for him. But, not this time. This will be my go-to potato soup from now on. Thank you Sandy!

Hi Sandy - tried this recipe and it came out wonderfully. I used collard greens and because they take so long to soften, I put them in at the beginning and they were cooked perfectly soft. Thank You

Thank you for this video. I've made the Zuppa Toscano before in my ricecooker/slow cooker but I will be getting an Instant Pot Smart soon and was wondering how I would translate the recipe. Thanks to you, now I know. :) I can't wait to make it in my Instant Pot. :) YUMMY soup. My hubby can't get enough of it, we would have it for days with no complaints. Hahaha. Thanks again. :)

Awesome! I have wondered how the Smart IPs are, let me know? This recipe was one of my favorites, too, and I knew I could make it easily in the IP. It took a few tries, but this is my fave. So easy to personalize, too! Have fun with your new IP, and take care!

Woulnd't reocmmend the smart version.. its a) more expensive b) already had a recall c) has more electronics that can go bad d) probably uses bluetooth/wifi to call home... it also has limited recipes available and even then - how hard is it to use the regular IP?

I am aware of the recall and the problem was fixed. It is a lot more expensive but I love that there is an actual timer.....set and forget.....so I can have everything in the pot, set it to start cooking at say.... 5:30pm vs having to figure out how many hours/minutes to set the counting timer to be able to start cooking at 5:30. Also, with the Smart version, you can see everything that is going on in the pot......pressure, how much longer, etc ....right from your phone. And the Smart pot actually can do Sous Vide whereas, the Duo can't. But anyway, since the Smart is not available at the moment thru their website nor Amazon, I am seriously considering the Duo60 because I am too excited to get my first Instant Pot. LOL. I don't know, I'm kind of a tech geek and like the bells and whistles of the Smart but I agree with you about having more "electronics go bad." Thanks for commenting. I'll take heed of our advice.

Not sure what I would trust sitting in the IP on the counter for hours ahead of time before it cooks though... Yes - the smart version does have the phone app which does help tell you the pressure - but to be honest... its just another feature that I'm not sure you will use/need. I turn my IP on, set the time and walk away.. whenever it decides to come to pressure, finish cooking and then beep beep beep.. that is when I come running. The Sous Vide option is very limited in the IP.. they have their own sous vide machine which hasn't been getting good reviews... better buying an IP-60 for $70 when it goes on sale again (seem to happen every 2 weeks), get yourself the highly rated Anova sous vide stick for $99 and enjoy your IP and sous vide appliance...

You're probably right. I am thinking more and more about just getting the Duo60. I'll keep an eye on the pricing. Right now, it's at $99. I haven't seen it go on sale for at least 2 months. Thanks for all your help. :)

I'm making this tonight but I'm making it Paleo but subbing in sweet potatoes and adding coconut milk at the end. It looks astounding and I can't wait to let you know how it comes out. Truth be told up front, I have been an employee of the Olive Garden for many many years, so I am very familiar with this KIND of soup. I know yours is a bit different, but I am excited to try it in my new amazing Instant Pot!

Awesome! I altered the recipe from when I made this video, and I now add bacon. I'm sure, being Paleo, you know about the uncured bacon. SO GOOD! But even without, it's great. Someone else made this like you are going to, and they loved it! I always liked OG's soup, I think mine is as good. Hope you like it!

Thanks for the reply, Sandy! The Zuppa came out so good, I made it a second time for my in-laws and the family LOVED it. The sweet potatoes were yummy in it, but they broke down a lot lore than white potatoes would have. They still tasted great, as did the addition of coconut milk at the end. I did also add uncured bacon as well, as they do in the OG soup, but mainly because I love bacon. Thanks for the great Instant Pot instruction, it really helped.

What kind of sausage are you using? Pkg looks like a breakfast sausage but you said Italian, right? Brand? Thanks; it looks wonderful.

JoAnn Mitchell hi, it's Jimmy Dean Hot Italian sausage. I love the kick of spice from it. You can use any sausage, but make sure it has some flavor. Otherwise you will need to add spices.

Looks delectable!!!! I'm a soup-aholic. Going to the freezer right now to get some hot Italian sausage and trying this recipe out! Thanks for a great video!

Why not saute the onions before you put in the sausage to saute?
