Pantry challenge vlog: mental health, time poverty, and getting creative!

  • Hello all,
    Thanks so much for swinging by my corner of the internet! Though this pantry challenge wasn't what I was expecting it to be, I still enjoyed the challenge over a weekend.
    In total what I ate was:
    Sourdough bread
    Carrot-apple muffins
    "Hamburger" soup with textured vegetable protein
    Leftover frozen spinach pizza
    Tons of tea and water
    Sourdough discard pancakes
    Taco soup
    Mushroom soup eggs
    and the random salad that wasn't from my pantry but was for my sanity lol
    Orange sesame salad:
    Leafy greens
    1 bell pepper
    1 cucumber sliced
    2 grated carrots
    1/2 bunch of cilantro leaves
    Cashews
    Wonton noodles for "croutons"
    Dressing:
    Zest and juice of two navel oranges
    2 tbsp sesame oil
    2 tbsp rice vinegar
    1 tbsp honey
    Seasoning salt and pepper

    I'm a 66 year old low income diabetic senior . I can't eat potatoes , pasta dishes , bread . These carbs raise my blood sugars . Most of my diet consists of protein and vegetables . I just cringe in frustration when I buy produce . Let alone meat .
