  • Hello everyone!!! This is a famous Mangalore Bonda / Goli Baje recipe. This is a popular snack from Mangalorean cuisine. It’s the best evening time snacks 😊 Enjoy it while its hot!!
    Traditionally the batter is allowed to ferment for several hours (30 min - overnight) to make the bonda’s fluffy and light in texture.
    In this instant method we add soda to cut short the long process. Skip soda if your using sour curd and fermenting for hours.
    This goes well with any type of chutneys.

    Ingredients:
    1 cup Maida / all purpose flour
    ¼ cup rice flour
    2 cups curd / yogurt
    2 green chilies chopped
    ½ tsp ginger paste / chopped
    ¼ tsp Hing
    ¼ tsp soda (soda- bi-carbonate) [skip if your fermenting batter]
    1 spring curry leaves chopped
    1 ¼ tsp salt (adjust as per need)
    2 tbsp water (adjust as needed)
    Oil for deep frying
