For me, I really prefer both the Porosus and Niloticus over the alligator leather since the scale pattern is much more pleasing. Porosus is the most expensive and often prized really well since they can go for really big sizes like B35s and B40s. Plus, even before the Himalayan Rage, it is a B30 Lisse Porosus Rouge H with 18k white gold hardware, which sparked the auction rage for Birkins. Also, in terms of symmetrical scales, I find it much better in the Niloticus crocodile, especially in B25, since the scales are puffy and not flat, and it is bigger in nature, so I find it more pleasing. Also, there are colors that are really best matched with certain leathers, like Bubblegum Pink 5P for alligator and K20 which is always found in alligator due to the small size. However, you can now find some K20 in porous non HSS or HSS. Lastly, from what I have heard, they have used the Niloticus for the Himalayan range due to the scale pattern and the size, since it can range from as small as a mini Constance to as large as a B35. The video is really informative and the one I really like is the B25 Alligator in Beton since Beton is an another holy grail color for Hermes.

Matte porosus is more valuable because the majority of the skins are vegetable dyed and have to be without blemish, they are unpainted and soft like velvet. Compare that to lisse (shiny) which is spray painted and polished with agate stone machine but can cover up imperfections. So matte is more valuable. Alligators actually have bigger scales and sourced from America are now less valuable compared to porosus and niloticus crocs. I own 2 porosus Kellys matte and Lisse. The matte is silky soft and is slowly taking on a slight reflective quality due to the fact that our hands secrete oils. As with Leathers such as barenia(Novonappa) the skin is matte in the beginning but after a number of years with handling it takes on a waxy shine and can rub out any scratches without a trace. So the value not only comes from the symmetry of the scales but the depth of dimension that the exotic skin reflects under light.
