we make your old recipe of Cincinnati chili 2 times a month lol. my kids ask for me to put on Mr. sludge so they can watch the sludge creature get lowered into the pot. been making a happy face in my maybe 2 pounds of ground meat for like 3 years now. keep up the good work dude, proud of all you have achieved.
The local custom is not to twist the noodles on the fork, way too sloppy. You cut with the side of the fork a bit at a time and work your way across the dish. It is also accepted to toss a few hot dogs in. You can cut them into wheels beforehand if you wish

Matty is my guy, but as a Cincinnatian, this isn't it. The presentation doesn't make it Cincy chili, its the unique spice blends and texture that makes it. There are several Cincinnati recipes and some use cinnamon, 100% cocoa/bakers chocolate. We typically don't brown the meat either. Cincinnati chili is more of a meat sauce/condiment and spiced more like Mexican mole but comes from Greek heritage. It isn't for everyone but you have to try it .
when this was on special at mattys meat and three for a weekend I went every single day for it...they also had the most amazing dessert truck at the same time.....gone but never forgotten Matt's meat and 3 the best part of the pandemic.......

They cut those stupid "chuck steaks" that no one buys, then I wait until it goes into the clearance bin and pick up like 5 pounds of chuck "steaks" for $10.
