I used this recipe with raspberries, I left the seeds and meat of the fruit in while I boiled it and the post product is really good with green tea or even sparkling water (the seeds are still in with the concentrate, reminds me of an instant keifer). I mixed mine with bubbly watermelon because of its almost bitter rein flavor it has, much better than an overload of sweetness, the concentrate really levels the balance between flavors and adds a nice, fresh, bouquet to the drink that is unbeatable for the wholesome quality of only having three ingredients!
charlie G Yes, I have made it and taken it. It becomes concentrate when the juice is evaporated to half its volume. No sugar or sweetener of any kind is required. Sugar is used as a preservative to keep it from spoiling in the refrigerator, but it is not required to make a concentrate.

Why do you scrape the top surface off, I know it can make end product cloudy but are their other reasons?

Adding water to blackberries dilutes them. You have made a cordial not a concentrate.
So, how is this a "concentrate?" It looks like you just made a syrup!
