Pickled radish isn't usually used as a base for a dish, it's usually a side dish, atleast in korean cuisine, so I can understand why she reacted like that

I think it is an acquired taste. You have to grow up eating it to like it
I make it and it's delicious. But I made it with plain noodles. Not the instant type. We get them here. You use it for hot or cold dishes. They taste very good cold. The thing is you def need to make a broth for it or it tastes yucky. In the show, he made a no-boil broth. In India we cook the broth, cool it, and pour it over the cold noodles. Tastes nice. I am vegetarian so I made a vegetarian broth. Also, the noodles I buy are made from rice flour. Not All-purpose flour, which instant noodles use.
I think u need to get used to it. I once tried cold soba in a fancy restaurant and it doesnt fit my pallete at all 😭
