To be honest, my favorite way to eat okra is the southern U S way. Dredged in stone ground corn meal and then deep fried in hot oil. Thank you for this delicious recipe! I adore okra! My mother taught me to not cut up the tips completely but to remove the stalk in a domelike manner so that the channels are still closed. This way, the "slimy" parts stay inside.
I completely agree with you, chef Kochar! I have always ADORED okra, and tried to grow it in my southern California garden, but I am too near the coast--as you must be aware, okra needs HEAT to bloom, so I was out of luck in both the U.S. and, obviously, in my native Sweden. Still, I'm always at the Farmers' Markets all summer, picking out the tiniest, tenderest little pieces. Good luck in the UK where I presume the glasshouses can build up the necessary heat--or you might cadge some from Prince Charles' Cornwall estates.
I always love cooking and since i am from india i have learned the basic rule to elevate the flavors of meat is to add onions, lemon juice and coriander. Once i was cooking for my gf and shes american and never used coriander before she takes once sniff of coriander and says it smells like stink bugs. Cooking has never been the same for me since. It f****** does smell like stink bugs.
Question: - both my wife and i just dont like green coriander, but a lot of Indian dishes use it. Its too dominant in flavour for us. Is there an alternative you could use? Currently we just miss it out.
Hi Allistair, the coriander should only complement the flavor, not dominate it. You can skip it if you don't prefer. There are indians who don't like the taste of coriander, not a big deal. There are no direct substitutes to my best knowledge. Is parsley mild in flavor, I am not sure. You can try adding mint leaves if you like the taste,kasuri methi or curry leaves but as I said earlier, these are not a milder substitute for coriander, rather alternatives that add flavor to the dish. Your indian grocery shop should have all the herbs I mentioned. Cheers!! Happy cooking

I went to his restaurant in Mayfair in 2006. I was conned his staff put a morsel of lamb and tarted it up with some fresh greens. Never again - when Indian food is tarted up u will get conned. Best to have it traditional. Atul is a great chef but his team are in it to commercialise Indian home food
