    Thank you Chef. Where I was born and where my mother’s people were from okra was grow every year. Where I live now, I can hardly find it . To be honest, my favorite way to eat okra is the southern U S way. Dredged in stone ground corn meal and then deep fried in hot oil. Finally Chef , you come from a country so rich in spices, and yet you use them conservatively. I would love to visit Northern India to stay at the Lady of the Lake Palace. Thank you Chef.

      Brazil is not the only place where they eat okra though-im from Africa and do cook it.
      tend to mix in in other sauces when i cook.

    Im from the US, and i know people down south use okra for gumbo and other stews, but what's funny to me is the only time ive ever had it was in Indian or Pakistani food, and it's really delicious

    Thank you for this delicious recipe! I adore okra! My mother taught me to not cut up the tips completely but to remove the stalk in a domelike manner so that the channels are still closed. This way, the "slimy" parts stay inside.

    I completely agree with you, chef Kochar! I have always ADORED okra, and tried to grow it in my southern California garden, but I am too near the coast--as you must be aware, okra needs HEAT to bloom, so I was out of luck in both the U.S. and, obviously, in my native Sweden. Still, I'm always at the Farmers' Markets all summer, picking out the tiniest, tenderest little pieces. Good luck in the UK where I presume the glasshouses can build up the necessary heat--or you might cadge some from Prince Charles' Cornwall estates.

    surprised that the lamb cooked so quickly, I always thought it took nearly 2 hours to cook. Have to try this.

    I always love cooking and since i am from india i have learned the basic rule to elevate the flavors of meat is to add onions, lemon juice and coriander. Once i was cooking for my gf and shes american and never used coriander before she takes once sniff of coriander and says it smells like stink bugs. Cooking has never been the same for me since. It f****** does smell like stink bugs.

    Question: - both my wife and i just dont like green coriander, but a lot of Indian dishes use it. Its too dominant in flavour for us. Is there an alternative you could use? Currently we just miss it out.

      Hi Allistair, the coriander should only complement the flavor, not dominate it. You can skip it if you don't prefer. There are indians who don't like the taste of coriander, not a big deal.
      There are no direct substitutes to my best knowledge. Is parsley mild in flavor, I am not sure. You can try adding mint leaves if you like the taste,kasuri methi or curry leaves but as I said earlier, these are not a milder substitute for coriander, rather alternatives that add flavor to the dish. Your indian grocery shop should have all the herbs I mentioned.

      Yes, he is the only Indian chef to get a Michelin star. (as far as I know)

    You need to make more videos! When I got married, I told my wife that I never eat 2 things, okra(bindi) and daal chawal. This recipe looks really good and now I'm going to eat Okra for the first time in 12 years lol

    I went to his restaurant in Mayfair in 2006. I was conned his staff put a morsel of lamb and tarted it up with some fresh greens. Never again - when Indian food is tarted up u will get conned. Best to have it traditional. Atul is a great chef but his team are in it to commercialise Indian home food
