My mom used to make the juiciest meatloaf, meatballs & stuffed peppers. I never bothered to learn it until I was older but then it was too late. My mom has dementia and she has forgotten so many of her amazing recipes. I wish I took the time when I was younger. I'm so very grateful though to have her with me.
My mom also made meatloaf, it was one of my favorite meals. I also didn’t learn how to make it and nobody else in my family knew how she made it. She passed away when I was in my 20’s, I’m now in my 60’s and I’m still trying to figure out how she made it.😢

The best spaghetti I've ever had was made with day old meatloaf. She chopped it up in the skillet and refried it before adding the homemade sauce. Simmered for half an hour. Delicious!

My maternal grandmother and my mother made the best meatloaf, of course they would add honey to the ketchup mixture and then while it was baking they would brush the glaze on at certain points of the 350° in the oven at approximately 35 to 45 minutes, it added extra crunch to the glaze and I always requested the end pieces. I love this simple recipe. I’ve always said with meatloaf, it’s what you DON’T put in that matters most; it really doesn’t need a lot of bells and whistles. Just high quality meat, panko, eggs, and yummy seasonings.
Before baking, you can coat the inside of the loaf pan with garlic and rosemary butter. Melt some butter, mix in minced garlic and finely chopped rosemary, let it cool and harden in the fridge, coat the inside of the pan, then add the loaf and bake. The meat will cook in the butter and give it a huge boost of flavor, also making it less likely to stick to the inside while baking.
My mom always used ground beef and ground sausage, crushed cracker crumbs, diced onion, sweet pickle relish, egg, Worcestershire, salt /pepper and for the top, tomato paste (I use ketchup). She used a baking pan with a trivet under the meatloaf so it wouldn't burn and just free formed the loaf (I use a meatloaf pan so the grease drains away. It was not dry, just delicious. Again it was made with love. One thing I add sometimes is about ¼-½ cup of shredded mozzarella. In the 50's hamburger was more fatty than today so a lot of grease was rendered. Some people even placed their meatloaf on bread slices while baking to soak up the grease.

For the topping, I use a can of condensed tomato soup and stir in a heaping tablespoon of brown sugar. Pour on top of the meatloaf before baking. It makes a delicious gravy. In addition to adding ketchup to the meat mixture (plus everything else you added), I add a teaspoon of yellow mustard. My mom used 4-5 slices of bread torn up into small pieces, but I prefer using bread crumbs. I have also made “mini meatloaves” in a covered large skillet on the stovetop for something different.
The meatloaf I was handed down was: Ground 80/20, diced onions, s&p, oatmeal, milk, egg, ketchup, onion powder, garlic salt, sometimes a little garlic & Worcestershire sauce. Combing everything but the beef. Then add the beef & mix well. Put in loaf pan. Cover in ketchup, bake 350 for 60 min , add a bit more ketchup and bake 5 additional minutes. Cut and serve. Comes out delicious every time.
We once had a Greek friend who had never eaten meatloaf until he ate some that I had made and fell in love with it. He sprinked feta cheese over it and that really jazzed up the flavor. Also, he loved our Manwhich Sloppy Joes and of course, added feta cheese to it. Feta is a cheese that enhances flavors of certain foods. He even put feta cheese on watermelon.

I love a good meatloaf. I usually use a catch-up glaze but once in a while I’ve used a good BBQ sauce especially of making it during the summer months to add a little extra flavor. I normally use Panko breadcrumbs but when I was growing up my grandma always used whole oatmeal as the binder since that was easy to get at the food banks and that was really yummy.
I agree with the bbq sauce buddy. My wife was building a meatloaf and found out she had no ketchup. Me (being the lazy guy I am) didn't want to drive to the store so I told her to use something else. After a quick look in the fridge, I found some Jack Daniels bbq sauce. She was a little hesitant to use it but after that one time, it was the "go to" topping for the meatloaf from that time on. The best! 😋
My mother made wonderful meatloaf she added onions and bell peppers after they were sauted in a little bacon grease and cooked. Sometimes she omitted the bell peppers and stuffed the peppers with the meatloaf mixture. We had cold meatloaf sandwiches the next day.
It is so enjoyable to watch this! My mama always use smashed up saltines in her meatloaf, but when she didn’t have those she used oatmeal, breadcrumbs, and sometimes even corn chips crumbled. But Panko would probably work okay.

Alton Brown taught me the best tip decades ago. Do not use a loaf pan; it boils the meat in its own fat. Cook it on a wire rack on top of a cookie sheet, and let the fat fall away. You're welcome.
I use a meatloaf pan. It’s a loaf pan with a smaller pan that sits inside, that has holes. Its really moist but sits up just enough for the fat to drain.
Actually, loaf pans work well for leaner grade like 90-5% for ground turkey and Pork.... Also, you Can lower the oven to 300-325° to Not fry it as you say if it's 80-20% and it'll Stay moister too! 😏

I like the recipe. I agree ketchup is not only an awesome condiment, its also an ingredient. I believe breadcrumb or panko acts more as a filler and softener as opposed to a binding agent... Ground beef will hold together but without bread crumbs or panko, it will have a very firm texture. Love the recipe.
I had an aunt who put a hardboiled egh in the middle before baking. A little touch of class & flavor. Enough cant be said for the next day meatloaf sandwich. Mmmm. 🙏❤😊🍻
I usually use 1lb ground beef, 1/2c-1c regular breadcrumbs, 1/2c-1c instant oats, up to 3 eggs, some Worcestershire sauce and optional soy sauce (a splash), some adobo seasoning or salt & pepper, either onion powder or one small chopped and sautéed onion, optional garlic powder, and either ketchup or jarred beef gravy (my husband doesn’t like it made with ketchup). The gravy works just like the ketchup does, in the dish as well as the glaze. Also, I grew up with my mom finely grating most of a standard size carrot into it, and even finely chopping up some celery and adding that as well. If you need a way to sneak some extra veggies in there, you can’t really tell. It does add a bit of flavor and moisture. I always loved my mom’s meatloaf growing up.

Yes, allowing meatloaf to age really adds to its flavor! Mom would sometime cook it, leave it in the pan overnight, and the next day reheat it and serve.
Looks good what I used to make was at the restaurant I worked at which was shoney's we used a hamburger or worchesterShire eggs oats instead of bread crumbs dittoed up small onion scraps that was left over after we made onion rings

We always made meat loaf the same with a couple of differences. We use oatmeal instead of bread crumbs. We don't use thyme but we put some chopped bell pepper in it and little slices of bell pepper on top a few across top when we add ketchup on top. We use to use tomato paste in the meat loaf and on top but use ketchup now
I use stovetop, savory hearbs, onion, whorchester sauce 2T, little dried mustard, sage, garlic salt, and celery salt. A TEASPOON kosher salt. Either ketcup, or barbque on top. Black pepper 2 taste.onecup milk. Its bullet proof, 85/15 hamburger. The ends are the best. I like the grease!

If you want simple. Just use a packaged dressing mix. Any flavor you like. Got the bread and seasonings all set. ... and I like a 2 to 1 beef pork meat mix
Instead of a dressing mix, try onion soup mix. Its great. Just dont add extra salt or its too much. I use hamburger and hot italian sausages without the skin, gives it a kick and adds amazing flavor. I dont care for fennel seeds, but if u like them u can use sweet italian sausage instead of the hot

My mom use to cook this recipe from her nana. So fire! Different ratio in ingredients forsure😂, but same ingredients for the most part. Lil celery salt and other small tweaks and make sure to bake with it covered in ketchup! Comes out poifect
No offense, but my mom handed down her meatloaf recipe to me and I still can't get it to taste like my mom's I think it's the love that's put in to it, not the seasoning.
This is similar to my recipe, but I find it's much easier to get the ingredients mixed really well if I first mix all of the ingredients together that I add to the ground beef and then add the ground beef to it. This also helps ensure that I don't overwork the ground beef, which can give it an unpleasant texture. I do it this way with meatballs, too.
Something else I recommend is using two level tablespoons of instant coffee per pound of meatloaf. Makes it taste wonderful. My dad came up with that, and he was no chef....
I just use Lipton Onion Soup Mix with the breadcrumbs, ketchup, egg, a little water for the soup mix, and Worcestershire sauce. Comes out perfect every time.

I kind of came up with this through trial and error. 2 lbs ground beef 1 envelope Lipton Onion Soup Mix 3/4 Cup plain dry bread crumbs 2 eggs 3/4 Cup water 1/3 Cup ketchup Preheat oven to 350 degrees. Combine all ingredients in large bowl. Shape and place in baking dish. Bake uncovered for 1 hour and 10 minutes. (Internal temperature of 160°.) Let stand 10 minutes before serving.

my meatloaf consists of the 80/20 ground beef , with chopped onions , green & red peppers , minced garlic and other good seasonings , i also add diced cubed potatoes and and 2' different cheeses , done over with the egg white coating and a center trench with maranra sauce , no breadcrumbs just meat and a good sauce and it is a drug ( addictive as heck )

Feta and cut up watermelon drizzled with balsamic vinegar is an awesome summer salad!
One of the drawbacks of Manwich mix is its occasional laxative reaction. Just be ready a couple hours after eating it.

Alton Brown taught me the best tip decades ago. Do not use a loaf pan; it boils the meat in its own fat. Cook it on a wire rack on top of a cookie sheet, and let the fat fall away. You're welcome.
You probably make really dry meatloaf
I use a meatloaf pan. It’s a loaf pan with a smaller pan that sits inside, that has holes. Its really moist but sits up just enough for the fat to drain.
That’s how I make it! It doesn’t come out dry at all! ATK cooks it the same way!
Actually, loaf pans work well for leaner grade like 90-5% for ground turkey and Pork.... Also, you Can lower the oven to 300-325° to Not fry it as you say if it's 80-20% and it'll Stay moister too! 😏
The way my mother made it in a loaf pan, the fat was also good.

I like the recipe. I agree ketchup is not only an awesome condiment, its also an ingredient.
I believe breadcrumb or panko acts more as a filler and softener as opposed to a binding agent... Ground beef will hold together but without bread crumbs or panko, it will have a very firm texture.

I usually use 1lb ground beef, 1/2c-1c regular breadcrumbs, 1/2c-1c instant oats, up to 3 eggs, some Worcestershire sauce and optional soy sauce (a splash), some adobo seasoning or salt & pepper, either onion powder or one small chopped and sautéed onion, optional garlic powder, and either ketchup or jarred beef gravy (my husband doesn’t like it made with ketchup). The gravy works just like the ketchup does, in the dish as well as the glaze. Also, I grew up with my mom finely grating most of a standard size carrot into it, and even finely chopping up some celery and adding that as well. If you need a way to sneak some extra veggies in there, you can’t really tell. It does add a bit of flavor and moisture. I always loved my mom’s meatloaf growing up.

Well done... I didn't have much meatloaf growing up in my Mother's house... Once or twice a year maybe.. My Mother used to cook a lot of recipes out of Family Circle magazine.. So you never knew what might end up on your plate.. My Father was from the Boston area so on most Saturday nights we had Hot Dogs & Baked Beans with steamed Brown Bread.. Always B&M Baked Beans and Brown Bread..
Now that guy can cook! I particularly liked how he explained the process and how he made it seems so simple 👍🏻👍🏻 dang I was almost salivating 😋

We always used oatmeal instead of bread crumbs and Italian seasoning choped onions and green peppers and if meat was too leàn a bit of ground pork 😊
Looks good what I used to make was at the restaurant I worked at which was shoney's we used a hamburger or worchesterShire eggs oats instead of bread crumbs dittoed up small onion scraps that was left over after we made onion rings

We always made meat loaf the same with a couple of differences. We use oatmeal instead of bread crumbs. We don't use thyme but we put some chopped bell pepper in it and little slices of bell pepper on top a few across top when we add ketchup on top. We use to use tomato paste in the meat loaf and on top but use ketchup now

I use stovetop, savory hearbs, onion, whorchester sauce 2T, little dried mustard, sage, garlic salt, and celery salt. A TEASPOON kosher salt. Either ketcup, or barbque on top. Black pepper 2 taste.onecup milk. Its bullet proof, 85/15 hamburger. The ends are the best. I like the grease!

Just use a packaged dressing mix. Any flavor you like. Got the bread and seasonings all set.

Instead of a dressing mix, try onion soup mix. Its great. Just dont add extra salt or its too much.
I use hamburger and hot italian sausages without the skin, gives it a kick and adds amazing flavor.
I dont care for fennel seeds, but if u like them u can use sweet italian sausage instead of the hot

My mom use to cook this recipe from her nana. So fire! Different ratio in ingredients forsure😂, but same ingredients for the most part. Lil celery salt and other small tweaks and make sure to bake with it covered in ketchup! Comes out poifect

No offense, but my mom handed down her meatloaf recipe to me and I still can't get it to taste like my mom's I think it's the love that's put in to it, not the seasoning.

This is similar to my recipe, but I find it's much easier to get the ingredients mixed really well if I first mix all of the ingredients together that I add to the ground beef and then add the ground beef to it. This also helps ensure that I don't overwork the ground beef, which can give it an unpleasant texture. I do it this way with meatballs, too.
Something else I recommend is using two level tablespoons of instant coffee per pound of meatloaf. Makes it taste wonderful. My dad came up with that, and he was no chef....

My brother doesn't use all those spices but he uses dried onion soup mix in his.
Some people uses cornmeal or Mal o meal instead of bread crumbs.

2 lbs ground beef
1 envelope Lipton Onion Soup Mix
3/4 Cup plain dry bread crumbs
2 eggs
3/4 Cup water
1/3 Cup ketchup
Preheat oven to 350 degrees. Combine all ingredients in large bowl.
Shape and place in baking dish.
Bake uncovered for 1 hour and 10 minutes. (Internal temperature of 160°.) Let stand 10 minutes before serving.

Hello first time viewer. I love meatloaf
my meatloaf consists of the 80/20 ground beef , with chopped onions , green & red peppers , minced garlic and other good seasonings , i also add diced cubed potatoes and and 2' different cheeses , done over with the egg white coating and a center trench with maranra sauce , no breadcrumbs just meat and a good sauce and it is a drug ( addictive as heck )
